(Dan Tri) - Once used as an offering to the king, the “bread” is now a famous specialty in Xuan Lap commune, Tho Xuan district, Thanh Hoa province. For many years, thanks to making “king” cakes, the people here have had a stable income.
Talking about banh rang bua is talking about a famous specialty in Trung Lap village, Xuan Lap commune, Tho Xuan district. For many years, people here have preserved the way of making this traditional dish, and many households are even "living well" and have a stable income. Ms. Do Thi Thuong (born in 1989, a resident of Trung Lap village) said that her family has a 4-generation tradition of making banh rang bua. According to Ms. Thuong, banh rang bua originated from the Tich Dien ceremony of King Le Dai Hanh in the past.

"After defeating the Song invaders, the country was at peace . Every spring, King Le Dai Hanh personally went to the fields to plow to start a year of favorable weather, good crops, and encouraged people to work hard in production. To show their gratitude, later, the people of Trung Lap village contributed the best rice grains and pork to make a type of cake with a unique flavor to offer to the king. The shape of the cake is made to resemble a harrow tooth," said Ms. Thuong. According to Ms. Thuong, until now, on every occasion of holidays, Tet, and weddings, the broom tooth cake is still one of the indispensable dishes on the tray of offerings in Trung Lap village. "After many years of circulation, the broom tooth cake has become a specialty dish. In recent years, the broom tooth cake has been loved and ordered by many diners. Thanks to that, many households in Xuan Lap commune have expanded their scale and started making cakes," Ms. Thuong shared.

Currently, in Trung Lap village, there are more than 200 households keeping the traditional profession of making rice cakes. Of these, nearly 20 households do it on a large scale, producing millions of cakes to sell to the market each year, bringing in an income of about 200 million VND/household. "Currently, many other localities in Thanh Hoa province make rice cakes, but the rice cakes in Trung Lap village have their own flavor and characteristics, so many people love them," Ms. Thuong shared. Talking about the process of making the cake, Ms. Thuong said that to make a delicious cake, it has to go through many stages, from preparing leaves, ground rice, cake filling to wrapping the cake. The leaves used to wrap the rice cakes are banana leaves, the cake filling is made from lean pork combined with dried onions. One ingredient that creates the brand of Trung Lap village's rice cakes is 13/2 rice. This is the traditional rice of the village. "13/2 rice is a type of rice that has a long growing time, grown in Trung Lap village since ancient times. This type of rice is sticky but not as greasy as sticky rice. After milling, the rice is soaked in water for 3-4 hours, then kneaded and ground into a thick liquid powder and then wrapped. On average, each worker can wrap 300-500 cakes per day," said Ms. Thuong. According to Ms. Thuong, normally, a finished cake must be boiled for 3 hours before it can be used. For frozen cakes, it must be boiled for 5-6 hours.

"Frozen cakes can be kept for 60 days. This preservation also comes from consumer demand. Many people who live far away, if they want to eat banh rang bua, can buy frozen products to put in the refrigerator and eat gradually," said Ms. Thuong. Mr. Tong Canh Tien, Vice Chairman of the People's Committee of Xuan Lap Commune, Tho Xuan District, said that banh la rang bua was recognized by the People's Committee of Thanh Hoa Province as a 3-star OCOP product (one commune one product program). Currently, the locality has completed the procedures and documents to recognize Xuan Lap banh la rang bua as a 4-star OCOP product. According to Mr. Tien, banh la rang bua is a product that helps farmers have a stable income during their off-season. To preserve this traditional product, the locality has built a craft village. It is expected that Xuan Lap will build more areas to grow 13/2 rice to maintain the cake-making profession.
