The "waiting" rice noodle shop, which sells more than 200 bowls a day, is nearly 30 years old in Hanoi.

The crab noodle shop at Chau Long market has been open for nearly 30 years. Many diners call it the "waiting noodle shop" because when you come during peak lunch hours, you have to stand and wait your turn to get a seat.
The restaurant serves vermicelli, mixed rice paper or water, depending on the customer's request. A full portion including crab soup, beef, ham, fish cake, celery, and mustard greens costs 50,000 VND. Many diners call the restaurant "waiting rice paper" because if they come during rush hour, they often have to wait their turn, one customer leaves and another takes their place immediately. With its affordable prices and taste, the restaurant is loved by many young people, who record videos and share them on social networks. Therefore, Ms. Phuong's customers are increasingly crowded, even welcoming foreign diners. In terms of ingredients, mixed rice noodles or vermicelli include pork leg, fish cake, fried onions, beef, vegetables, crab fat, water spinach, celery and bean sprouts... Ms. Chinh (in pink shirt), used to work near the rice noodle shop so she often came here for lunch. Currently, Ms. Chinh has moved to Dao Tan Street (Ba Dinh, Hanoi ) which is quite far from the shop but still comes to enjoy rice noodle with crab." In terms of ingredients and basic preparation, there is probably not much difference compared to other mixed rice noodle shops including pig's ear, fish cake, fried onions, beef, vegetables, crab roe, water spinach, celery and bean sprouts. "The rice noodle shop here is quite delicious, with a full bowl of beef and pork roll that tastes good. However, at lunchtime, you have to wait about 10 - 15 minutes for your turn," Ms. Chinh shared. Mixed rice paper is popular on hot days. The restaurant opens from 11am to around 5pm. The busiest time is around 12:30pm. Diners should come early or late to avoid having to wait for a seat or their turn to enjoy rice noodles and crab vermicelli.
