Bitter melon stir-fried eggs
Ingredient
1 – 2 medium bitter melons; 2 chicken or duck eggs; Shallots, green onions; Fish sauce, salt and seasoning powder.
How to do it
Prepare ingredients: Wash bitter melon, cut in half lengthwise and remove seeds. Slice into thin slices and soak in a bowl of cold water for 3-5 minutes. Remove bitter melon and drain. Cut off roots, wash green onions, and chop finely. Peel shallots and chop finely.

Vegetable egg roll
Ingredient
3 – 4 eggs; Onions, carrots, green onions; Fish sauce, salt and seasoning powder.
How to do it
Prepare ingredients: Peel, wash and dice onions and carrots. Wash green onions and chop finely. Make egg mixture. Crack eggs into a large bowl and stir the mixture with chopsticks. Use a sieve to strain the egg mixture until smooth.

Add the diced onion, carrot, and green onion mixture and season to taste. Fry and roll the eggs. Sweet and sour quail eggs are easy to make and nutritious.
Sweet and sour sauce: Mix chili sauce, sugar, fish sauce, pepper, tomato sauce, vinegar and seasoning powder in a large bowl. Add a little water, stir with chopsticks until the mixture is well blended.
Heat oil in a pan, fry quail eggs until the whites turn golden brown and firm. Then remove the eggs and drain.

Scrambled eggs are suitable for all ages.
How to do it
Prepare ingredients: Put 80ml of milk and 6 grams of cornstarch in a large bowl, stir with chopsticks until the cornstarch is completely dissolved. Crack 2 eggs in, continue stirring well. Chop green onions, sprinkle some seasoning and pepper.
Heat the pan, add 5 grams of butter and melt over low heat, add the egg mixture and spread evenly throughout the pan. Stir the eggs until cooked, moderately condensed, then turn off the heat and put on a plate. You should not let this egg dish cook too much because it will dry the eggs and reduce the characteristic richness.
