How to make: Chop the spare ribs into small pieces, wash them, boil a pot of water, put the ribs in and blanch for about 3 minutes, then pour them out, wash them thoroughly, and drain.
Put the ribs in a clean bowl, add shallots, pepper, a tablespoon of fish sauce, a teaspoon of sugar, a teaspoon of salt, mix well, marinate for about 1 - 2 hours.
- After marinating, put the ribs in the pot, put on the stove, boil over low heat for about 3 minutes, then add cold water to cover the ribs, cover tightly and continue to cook for 30 to 35 minutes.
Use chopsticks to gently poke through the soft meat and when the water has reduced, turn off the stove.
Using another pan, boil about 1 tablespoon of sugar with 1 tablespoon of water, cook until the sugar turns amber.
Add the cooked ribs, use chopsticks to stir evenly so that the sugar coats the meat evenly, then cover the pot tightly.
- Add fish sauce and salt to taste, continue to boil for about 5-10 minutes until the water is reduced, then turn off the stove, add chopped green onions (if you like), scoop onto a plate and serve as a savory dish with rice. Because the ribs have been pre-cooked and are already seasoned, when you braise like this, the meat will quickly absorb the seasoning, become soft and not dry.
