Instructions: Cut the pork ribs into small pieces, wash them thoroughly, bring a pot of water to a boil, blanch the ribs for about 3 minutes, then drain and rinse them again thoroughly, and let them dry.
Place the ribs in a clean bowl, add dried onions, pepper, one tablespoon of fish sauce, one teaspoon of sugar, one teaspoon of salt, mix well, and marinate for about 1-2 hours.
- After marinating, put the ribs in a pot, place it on the stove, bring to a boil over low heat for about 3 minutes, then add enough cold water to cover the ribs, cover tightly and continue to cook for another 30 to 35 minutes.
Use chopsticks to gently pierce the tender meat, and when the liquid has reduced, turn off the heat.
In a separate pan, bring about 1 tablespoon of sugar with 1 tablespoon of water to a boil, simmering until the sugar turns a golden brown color.
Add the cooked ribs, stir well with chopsticks so that the sugar coats the meat evenly, then cover the pot tightly.
- Add fish sauce and salt to taste, simmer for another 5-10 minutes until the liquid has reduced, then turn off the heat. Add chopped scallions (if desired), and serve as a savory dish with rice. Because the ribs have already been cooked and seasoned, braising them this way will allow the meat to absorb the flavors quickly, become tender, and prevent it from drying out.
