During Tet, families wrap a large quantity of cakes and leave them for a long time, the cakes will easily get moldy at the corners, not spreading to the whole cake. You can cut off the moldy part and eat the remaining parts. Note that the mold appears at one corner of the cake, but some strains of mold have the ability to ferment and make the cake sour. Therefore, you need to cut it out widely around, take only the intact part of the cake, then steam or fry the cake carefully before eating.

If the mold spreads too much, you should throw away the cake, because the bacteria have penetrated deep inside and if eaten, it can easily cause stomachache and digestive disorders.

Preserve banh chung by leaving the leaves wrapped and put it in the refrigerator, cut it as you eat it, and cover the cut part with plastic wrap. If the cake becomes hard, boil, fry or steam it again and continue eating. Banh chung can be kept in the refrigerator for 7-10 days.

In general, it is best to avoid eating moldy foods because moldy foods produce toxins.
