The small and pretty restaurant of Mr. Nguyen Thai Chau (36 years old) and Mr. Nguyen Hoang Vu (33 years old) is located at 14B on the quiet 46th street in District 4. I remember this time last year, when it had just appeared on the Michelin list, I immediately stopped by the restaurant and was surprised to see that there were only a few customers sitting there eating.

Mr. Chau was gentle and warm to talk to us and told us that 80% of the restaurant is for take-out, the restaurant only has 1-2 tables for customers to eat in. When I arrived, it was not the restaurant's peak time to welcome customers.

The day he heard the restaurant was named Bib Gourmand by Michelin, the owner was both surprised and happy. He said he did not expect that the restaurant he and his friend opened in 2018 would receive such a great honor.

The owner said his restaurant is just like any other beef noodle shop, so he was quite surprised to be noticed by Michelin reviewers. He said the secret might lie in the rich broth and fresh ingredients, which are new every day.

Over the past year, Mr. Chau said he has always tried to maintain and improve the quality of his dishes.

Soon after, this restaurant quickly became a hit, as many curious diners in Ho Chi Minh City came to support it. The restaurant owner himself admitted that thanks to being honored by Michelin, the restaurant became more crowded, including foreign customers.

After nearly a year of the beef noodle shop being honored, Mr. Chau confided that throughout the past time, the shop has always strived to serve customers better. From mainly selling take-away, the shop now arranges more tables to serve the needs of customers eating on the spot.

"Currently, because of the rising cost of goods and expensive input materials, the restaurant has only increased the price by 5,000 VND, from 45,000 VND to 50,000 VND for a bowl of beef noodle soup without ham. A bowl of beef noodle soup with ham is still 70,000 VND," he shared.

Mr. Vu, the remaining restaurant owner, said he will attend the Michelin Guide 2025 announcement ceremony in Da Nang . Both owners hope to continue to receive this special recognition this year.

Talking about the opportunity to open this restaurant, Mr. Chau shared that he used to study pharmacy. After graduating, he did not pursue a career but went into business because he thought working would make money faster. So he and Mr. Vu opened this restaurant.

"My mother in Vung Tau has also been selling food like this for more than ten years. Since I was little, I have helped my mother, so I have learned how to cook to open a restaurant," Chau added.
