1 chicken weighing about 1.5kg, fish sauce, garlic, shallots, ginger, lemongrass, chili, green onions, Vietnamese coriander, cilantro.

Preliminary processing
Chicken: Clean the chicken, rub with salt and ginger to remove the smell. Rinse the chicken again and drain. You can cut the chicken into bite-sized pieces or leave it whole, as desired.
Garlic, shallots, chili: minced. Sliced ginger.
Marinate chicken
Mix the mixture including: 5 tablespoons fish sauce, 1 tablespoon sugar, minced garlic, minced shallot, chili, pepper. Pour the mixture over the chicken and marinate for 60 minutes to let the chicken absorb the spices.
Steamed chicken
Prepare a steamer, put sliced ginger and lemongrass on the bottom of the pot to make the chicken more fragrant. You can add some shallots and a few cloves of garlic. Put the marinated chicken in the pot. If there is any marinade left, pour it over the chicken. Turn the heat to low, cover the pot and steam the chicken for 30-40 minutes depending on the size of the chicken. When the chicken has shiny skin and is soft and tender, it is done. You can use chopsticks to poke the chicken thigh to see if it is cooked.
Sprinkle green onions, Vietnamese coriander, pepper and a few slices of chili on top of the cooked chicken. Dip it with salt, pepper and lemon or chicken broth, both are delicious. You can eat it with hot rice or noodles, bread.
