In the past, buffalo jerky or Chinese sausage was preserved by hanging it over a wood stove. The smoke and heat from the stove would protect the meat from mold and bacteria while still retaining its characteristic flavor.

Just like that, the smoked meat specialty of the highland people gradually spread beyond the highland districts to the plains and cities, becoming a favorite dish of many people.
Ms. Nguyen Thi Thu Hien (born in 1983, residing in Kim Son town, Que Phong district, Nghe An province) said that customers had ordered sausages, beef jerky, and buffalo jerky more than half a month ago.

Therefore, in order to deliver orders to customers on time, recently, Ms. Hien had to hire 3 more workers to produce sausages and other types of smoked meat such as beef jerky, buffalo meat, and smoked pork.
Compared to previous years, the number of customers ordering smoked meat has increased but the price has not increased significantly.
Currently, Ms. Hien sells dried buffalo and beef at 1,000,000 to 1,100,000 VND/kg, dried pork at 450,000 to 500,000 VND/kg, and Chinese sausage at 300,000 to 350,000 VND/kg.
Ms. Hien shared: "From December 20th of the lunar calendar, I will start delivering orders to customers in distant provinces. Therefore, all the workers are focusing on making batches of smoked meat and Chinese sausage for customers. During Tet, we often work until the last day off to send to customers in the province."

Investing in machinery, local people improve the quality of specialties, city visitors praise in admiration
At Ms. Phan Thi Quy's production facility in Kim Son town, fires are also burning all night to dry goods for the most important crop of the year.
Western Nghe An mountain forest specialties are now not only present in the province but also spread to the North and South.
To preserve the meat longer, establishments also have to invest in zip bags and vacuum machines. They also include dipping salt in their orders so that customers can enjoy the true taste of the smoked meat. Customers also give endless compliments.

The meat is cut into pieces larger than the palm of a hand, the fat and tendons are removed before being marinated with spices such as chili, ginger, etc. and indispensable doi and mac khen seeds.
Doi and mac khen seeds are the soul of this highland dish. Then, each piece of meat is skewered on an iron bar and placed on the kitchen shelf to let the smoke naturally dry the meat.
After 2 to 3 days, under the influence of heat from the charcoal stove, firewood... the meat gradually shrinks and dries. On average, 10 kg of fresh beef produces 3 kg of beef jerky. There are always workers on duty in the kitchen to continuously turn the meat so that the outside is dry but the inside is still soft, not smoky.

Ms. Phan Thi Nga (residing in Kim Son town) has been making beef jerky and buffalo jerky for more than 10 years. On normal days, this is just a side job.
Only during Tet do people concentrate their labor to produce these specialties. These specialties are most popular during Tet because they are convenient to serve to guests.
"Normally I only process 50kg of various types of meat each month, but on average this time I process 80 to 100kg of meat per day," said Ms. Nga. During each Tet holiday, Ms. Nga earns more than 100 million VND.
