Ingredients: 300 grams of tiger prawns; 300 grams of squid; 4 scallops; 2 cucumbers; 2 onions; 2 red peppers; 2 cloves of garlic; 1 tablespoon of shrimp paste; 2 teaspoons of brown sugar; 3 lemons; 1 tablespoon of fish sauce; cooking oil; mint leaves and coriander.
Instructions: Prepare shrimp and cut squid into bite-sized pieces. Cut scallops in half.
Finely chop the onion. Cut the cucumber in half lengthwise, use a spoon to scoop out the seeds and juice, cut the cucumber into long pieces, mince the garlic and 1 chili. Slice the remaining chili, then halve the lemon.
Heat a pan over high heat. Add the oil and shrimp paste. Fry quickly for about 1 minute or so, then add the chopped chili, garlic and onion.
Continue frying and stirring the mixture for a minute then add the cucumber, fish sauce, sugar and the juice of one lemon.
Add seafood and stir quickly for another 2 minutes, until ingredients are cooked.
Scoop the dish into a bowl, garnish with sliced chili, green onion and half a lemon. The dish is done.
