| The Pacific Alliance was officially established on April 28, 2011, with the aim of promoting free trade among member countries, while achieving free trade partnerships with other countries or regional groups. The Alliance's current priority is the Asia-Pacific region. |
This year's event is impressive in scale with nearly 120 food stalls from embassies, consulates, foreign cultural centers, local foreign affairs departments and many large enterprises. Visitors will have the opportunity to immerse themselves in the cultural exchange space, exploring diverse cuisine from all regions of Vietnam and many countries around the world .
This year, the event features the Pacific Alliance with diverse and rich menus from four member countries including: Colombia, Chile, Mexico and Peru.
In particular, according to the Colombian Embassy in Vietnam, in the context of Colombia holding the rotating presidency of the Pacific Alliance, the participation of this South American country in the 2025 International Gastronomy Festival has a double meaning: helping to strengthen the friendship and cooperation with Vietnam as well as with other countries, and at the same time being an opportunity to introduce its cultural and culinary identity to the world.
It can be said that the Pacific Alliance booth is a meeting point for those passionate about Latin American cuisine and culture.

Colombia
At the Colombia booth, visitors feel like they are embarking on a memorable culinary journey, imbued with the culture of this country.
The first dish is Buñuelos , a crispy, golden and delicious fried dough cake, a traditional dish that is indispensable during Christmas.
To balance the taste buds, diners can enjoy a cup of Arroz con leche (rice pudding), a sweet, creamy dessert with cream and milk, evoking the warmth and familiarity of every Colombian family. In particular, diners cannot miss a cup of Colombian specialty coffee - a symbol recognized by the whole world. This type of coffee is famous for its soft, delicate, easy-to-drink flavor and superior quality, demonstrating the pride of the agricultural industry from this South American country.

Chile
Meanwhile, Chile brings a signature dish to family gatherings: Empanadas de Pino . This famous dish conquers diners with its thin, golden-brown crust that creates a crispy texture. Inside is a typical savory filling, with a wonderful blend of richly spiced beef, fragrant onions, and the rich flavor of boiled eggs and olives.
In addition, diners cannot miss the premium Chilean wines made from carmenere grapes of the WeWine brand, or many other famous wines such as Cabernet Sauvignon, Chardonnay, Sauvignon Blanc... Mexico
Coming to the Mexican booth, diners will have the opportunity to enjoy typical flavors such as birria (traditional stew) and chicken chipotle (chicken with smoked chili sauce). These are all dishes that show the depth and diversity of the local cuisine. In addition, the booth also serves Mexican beer and margaritas - drinks associated with Mexican culture.
Mexico is also the birthplace of the national spirit tequila, the homeland of the blue agave plant. Traditional Mexican cuisine has long been recognized by UNESCO as an Intangible Cultural Heritage, and tequila is also listed as a World Heritage. Therefore, Mexico's participation in the 2025 International Gastronomic Culture Festival is expected to contribute to spreading and honoring the country's cuisine.

Peru
Coming to Peru, diners will be treated to a diverse menu, clearly reflecting the culinary cultural exchange between the high Andes and coastal areas.
The opening highlight is the Peruvian tamales , made from corn dough (masa) stuffed with meat, wrapped in banana leaves or corn husks and steamed. This is followed by the tantalizing pan con chicharrón, a delicious sandwich of crispy pork in a special Peruvian sauce, or causa de pollo , a layered potato dish seasoned with spices. Finally, visitors can have alfajores biscuits dipped in condensed milk and coconut for dessert. In addition, the Peruvian pavilion sells typical drinks such as pisco sour .
It can be said that the participation of the Pacific Alliance at the 2025 International Gastronomy Festival once again emphasizes the Alliance's commitment to promoting integration and cultural exchange with Vietnam, especially through cuisine, contributing to enhancing cooperation, tourism and mutual understanding between countries.
