Prepare ingredients and marinate meat
Wash the lean meat and cut into squares keeping the grain of the meat. Try to cut along the grain of the meat to make it easier to grind and make the floss look better.
Slice the meat against the grain into small pieces.
Next, boil the meat once, then rinse and drain. Next, marinate the meat with salt and onion to absorb the spices. Then simmer until the meat is just cooked, avoid cooking for too long so that the meat does not lose its nutrients.

Grind meat
When the meat is cooked, tear it along the grain to make it easier to grind. It is best to tear it while it is still hot because the tender meat will tear it easier and faster. You do not need to tear it too small, because there is a step of grinding the meat later.
Next, put all the shredded meat on the stove and simmer, stir until the meat is drained and tightened. The next step is to grind the meat. With 700gr of meat, you can divide it into 2 batches.
Grind when tearing meat, turn meat over to drain.
Put the meat into the blender with the floss beater and press and release for about 30 seconds until the meat fibers are loose and fluffy. If you do not use a blender with a floss beater but use a regular blender, you should blend at medium speed until the meat is evenly shredded, do not blend too finely.
Beat the meat with a blender 2-3 times.
However, if you want the meat to be fluffy, you should repeat the step of frying the meat to drain the water. When the meat is less watery, it will be fluffier, but it should not be fried until it is dry and hard. Then beat the meat with the blender 2-3 more times and it is done.

When frying meat, use a large pan to fry all at once to save time. Season with fish sauce to taste, mix well so that the spices are absorbed into the meat. Continue frying until the pork floss is dry, golden in color and has a characteristic aroma.
