Red onion, ginger, chili peppers, fish sauce, soy sauce, oyster sauce, rice wine, honey.
Pre-processing the ingredients
Peel and wash the ginger, then crush it. Peel and finely chop the onion and garlic.
Wash the fresh chicken wings you bought with salt water, then rub them with alcohol to remove the fishy smell, and finally rinse with cold water.

Place the chicken wings in a bowl, add the crushed ginger and 1 tablespoon of salt, then pour in boiling water (around 70-80 degrees Celsius) and let them soak for about 10 minutes to firm up the chicken and enhance the aroma.
Remove the chicken from the water and let it drain. Add some chopped onion and garlic, half a teaspoon of seasoning powder, and 1 tablespoon of cooking oil, then mix well.
Preparing butter-fried chicken wings
Heat a pan on the stove, add cooking oil, and when the oil is hot, add the chicken wings and fry until golden brown. Do not overcook them, or the chicken wings will become dry. Once the chicken wings are golden brown, remove them and let them drain.
Mix the sauce with 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1 tablespoon oyster sauce, 1 tablespoon honey, 2 tablespoons water, and a little MSG and seasoning powder. Stir well until dissolved.
Heat a pan on the stove and add 1 tablespoon of oil. When the oil is hot, add the minced garlic. If you like spicy food, you can add 1 chopped chili pepper and sauté the garlic and chili until fragrant. Then add the butter. Once the butter melts, pour in the prepared sauce, then add the chicken and stir quickly until the chicken is coated with the sauce and the sauce thickens. Turn off the heat.
