How to make soy sauce marinated eggs

Ingredients: 10 eggs; 200ml soy sauce; 250ml water; 50g onion (1/2 bulb); 1 clove of garlic; 3 shallots; 5 sprigs of green onions; 10 chili peppers; 10g roasted sesame seeds. Seasoning: sugar, salt, white wine, vinegar.

Instructions:

- After buying the eggs, wash each one carefully, being gentle to avoid breaking them. If the eggs have been refrigerated, let them sit out for a while before boiling.

Wash and finely chop the onions and scallions. Slice the garlic and shallots thinly. Chili peppers can be left whole, crushed, or sliced, depending on your preference. Briefly rinse the sesame seeds with water, then toast them over low heat until golden brown.

- Place a pot of water on the stove. Once the water boils, reduce the heat and add the eggs one by one. Gently stir with chopsticks in a clockwise direction so that when cooked, the yolk is in the center of the white, making it look nicer when cut in half. Note that the cooking time for soft-boiled eggs is about 6-7 minutes. Once cooked, remove the eggs and immediately place them in a bowl of ice water, then peel them. A little tip to help you peel eggs easily is to add a little vinegar and salt to the water while boiling.

- Combine soy sauce, water, 2 tablespoons of sugar, and 1 tablespoon of white wine in a pot and stir well. Bring the mixture to a boil, then turn off the heat. Remember to taste and adjust seasoning as needed. Once the mixture has completely cooled, add the onion, scallions, shallots, garlic, chili peppers, and roasted sesame seeds, and mix well. Arrange the eggs in a glass container or jar, then pour the soy sauce mixture over them until they are completely submerged. Seal the lid tightly. After soaking for 6-8 hours, the eggs will have absorbed the flavors and are ready to enjoy.

Soy-marinated eggs can be served with white rice, vermicelli, bread, or instant noodles. To prevent boredom and enhance the flavor, you should eat them with boiled vegetables or pickles. The dish can be stored in the refrigerator for about a week.
