The coastal city of Nha Trang (Khanh Hoa) is famous for many delicious specialties, but there is one dish that holds a special place and leaves many memories for visitors from near and far, which is Ninh Hoa grilled spring rolls.

Recently, the Asia Record Organization officially decided to establish 10 new Asian records for Vietnamese Cuisine and Specialty Gifts according to the criteria of the Asian Cuisine and Specialty Records 2023, including Ninh Hoa grilled spring rolls (Khanh Hoa).

Tourists know Ninh Hoa spring rolls in two main types: grilled spring rolls and sour spring rolls. Each type of spring rolls has a different flavor, but all are delicious and attractive.

Ninh Hoa grilled spring rolls are made from pork. After buying them, people will wash the meat thoroughly, cut them into small pieces, then mix them with a little lard to enhance the aroma and fat content of the dish, then marinate them with spices such as salt, pepper, MSG and sugar and then grind them until smooth.

After being ground, the meat is shaped into a tube and grilled over hot coals. During the grilling process, the maker must constantly rotate the sides of the meat skewers so that the spring rolls are golden brown, cooked evenly and not burnt. After being grilled over hot coals, the meat is golden brown and fragrant.

When eating, Ninh Hoa grilled spring rolls will be served with raw vegetables, cucumbers, green bananas, sour star fruit, fish mint, basil, lettuce, green mango, crispy fried rice paper and a bowl of fatty and rich peanut sauce.

The accompanying vegetables include cucumber, green banana, sour star fruit, fish mint, basil, lettuce, green mango... All these spices are wrapped in rice paper, mixed with a special dipping sauce only for Ninh Hoa spring rolls.

The dipping sauce of this dish is also very special, helping to create a special flavor that makes many people remember this delicious dish. The dipping sauce is quite elaborately mixed with ingredients such as meat, shrimp, pork liver, roasted peanuts, garlic, chopped chili... creating a smooth, beautiful yellow dipping sauce.

Nem chua

Nem chua is a dish found in many provinces and cities and is mainly wrapped in banana leaves. However, Ninh Hoa nem chua is wrapped in star fruit leaves or star fruit leaves to enhance the aroma.

The main ingredients to make Ninh Hoa nem chua are lean pork thigh and pork skin. The thigh meat must be the softest part. Therefore, each pig can only choose about ten kilograms of meat to make nem chua.

After buying the pork, it will be washed thoroughly, then all the excess tendons will be removed, sliced thinly with the skin and marinated with spices such as salt, pepper, sugar, and chili.

Thinly sliced pork skin is mixed together, marinated with spices, rolled in star gooseberry leaves and then tightly wrapped with another layer of leaves on the outside.

After the meat has absorbed all the spices, it will be ground and the meat must be ground as finely as possible, because the finer the meat is, the more delicious and flavorful the spring rolls will be.

After being ground, the pork is wrapped in star fruit leaves or star fruit leaves to create a distinctive and attractive aroma for the spring rolls. After that, the spring rolls must be carefully stored in a dry, cool place, away from water and direct sunlight.

The fermentation process takes place over a period of about 3 days. After this period, the spring rolls are ready to eat. The spring rolls now have a light pink color and the strong sour taste of the traditional fermentation method, with a little bit of the richness of the pork, the crunchiness of the skin and the spicy taste of red chili or pepper, all of which will make all your senses explode from the first minute you taste them.

At first hearing, making nem chua seems simple but it is not. The process of making nem must be done extremely meticulously and carefully, because if there is even a little mistake, the nem will not achieve the desired sourness and flavor.

When traveling to Nha Trang, tourists can see many places selling Ninh Hoa fermented pork rolls, usually wrapped in small bundles of 15-20 pieces. This dish is bought by many tourists as gifts for relatives and friends./.
