These days, it's clam season, so my mother takes the opportunity to go to the market to buy a few kilograms of clams to soak and extract the meat for making soup.
After soaking the clams in rice water for a few hours to release some of the dirt, rinse them thoroughly and then boil them.
Boil the clams until they open their shells, then remove them. Let the clam broth settle to remove any remaining sand, then pour it into another pot.
Next, take the freshly removed clams and rinse them, separating the clam meat. Bring the clam broth to a boil, then add the clam meat and season to taste.
Finally, add the chopped water spinach to the pot and bring to a boil. And there you have it, a delicious bowl of water spinach and clam soup.
Water spinach cooked with baby squid is also delicious. When buying baby squid, there's no need to remove the ink sac; just rinse them gently under running water, then drain and marinate with seasonings.
To make a delicious soup, my mother would usually put a little peanut oil in the pot, then sauté the onions and garlic until fragrant, and then add water.
When the water boils, add the baby squid and chopped water spinach to the pot, season to taste, and turn off the heat. Ladle the squid and water spinach soup into bowls. Enjoy the plump, fresh baby squid along with the flavor of the water spinach; everyone will praise how delicious it is!
