On the afternoon of September 21, Dr. Mai Van Muoi, Director of the Department of Health of Quang Nam province, said that the Pasteur Institute of Nha Trang had announced the results of testing samples related to the food poisoning case after eating Phuong bread (No. 2B Phan Chau Trinh, Minh An ward, Hoi An city, Quang Nam province).
Accordingly, the test results of 12 food samples and 1 stool sample determined that many foods used to make Phuong's bread were contaminated.
Many food samples at Phuong bakery were contaminated with bacteria.
Specifically, the pork patty sample (sample saved on the morning of September 11) tested positive for Bacillus cereus strains that produce NHE (non-hemolytic enterotoxin) and HBL (hemolytic enterotoxin). The braised pork sample (sample saved on the morning of September 11) tested positive/25g for salmonella spp.
Samples of vegetables, lettuce, Vietnamese coriander, onions, and cucumbers (taken at the storage facility at 7:30 a.m. on September 12) also tested positive for Bacillus cereus strains that produce NHE toxins and positive/25g for salmonella spp.
The sample of braised pork (taken at the storage facility at 7:30 a.m. on September 12) also tested positive/25g for salmonella spp.
The meatball sample (taken at the storage facility at 7:30 a.m. on September 12) tested positive for Bacillus cereus producing NHE toxin.
Two samples of braised pork and meatballs (taken at 10:00 a.m. on September 13, finished processing at 7:00 p.m. on September 12) tested positive/25g for salmonella spp.
On September 20, the owner of Phuong bakery sent a letter of apology.
In addition, there was a stool sample from a 71-year-old woman (foreigner), which tested positive for salmonella group D.
According to doctors, Bacillus cereus bacteria is one of the leading causes of food poisoning, after Salmonella. Bacillus cereus is common in the environment, in feces, and soil, so it can easily contaminate food. This bacteria can exist in spore form and is resistant to high temperatures.
Food containing this bacterial toxin usually causes two types of poisoning. The first type causes nausea, vomiting, and abdominal pain, with rapid onset within 6 hours of eating. The second type occurs more slowly, from 6 to 15 hours, causing diarrhea when the bacteria are in the intestines.
As reported by Nguoi Lao Dong Newspaper, from around 8am on September 11, some locals and tourists ate sandwiches (pate, pork belly, meatballs, raw vegetables, fresh egg sauce, pickles, Vietnamese coriander, lettuce, pickled papaya, pork sausage) bought at Phuong sandwich shop.
By around 11am the same day, some people had symptoms of high fever, vomiting, abdominal pain, and frequent and prolonged loose stools. At least 150 cases of food poisoning after eating bread were hospitalized and treated at medical facilities, including dozens of foreign tourists.
