The capital Hanoi always shows a relaxed and calm atmosphere with small shops and restaurants that you can easily find in the Old Quarter. This city converges the typical Northern flavors of traditional Vietnamese cuisine, emphasizing natural freshness, seasoned with many different spices and herbs to create a unique combination for each dish. Meanwhile, Ho Chi Minh City is a vibrant and fast-growing city, which always brings visitors a unique source of energy with a diverse cuisine. 29 Michelin-starred restaurants
In the list of 103 locations, there are 4 restaurants rated “one Michelin star” thanks to the quality of delicious cooking and providing an outstanding culinary experience, worthy of tourists stopping to enjoy when coming to Vietnam. Among them, Ho Chi Minh City has the contemporary style Anan Saigon restaurant. Chef Peter Cuong Franklin of Anan Saigon has applied modern cooking techniques to street food recipes to create delicious and attractive flavors.
The other three restaurants in Hanoi are GIA - a contemporary Vietnamese restaurant by Chef Sam Tran with a seasonal menu inspired by Vietnam's culinary heritage, with elaborate and beautifully presented dishes, blending delicate flavors; Hibana by Koki restaurant offers an impressive visual experience with a 14-seat dining counter in the basement of Capella Hotel, where Chef Hiroshi Yamaguchi performs a skillful and meticulous teppanyaki preparation. Tam Vi restaurant has a classic teahouse style, imbued with the Northern spirit with a collection of antique furniture and parallel sentences carved on wooden boards. The restaurant mainly serves home-cooked dishes from Northern Vietnam, but diners can also choose some dishes from Central or Southern regions.
Outstanding Young Chef Award given to Sam Tran
There are also 29 Bib Gourmand establishments (a list of favourites recommended by the judges, including quality dishes at affordable prices). The Bib Gourmand award honors Michelin Guide restaurants with “worth-every-cent” food quality. These are restaurants that are highly rated for their menus with affordable dishes, while the quality of the dishes and service is still guaranteed. The Bib Gourmand list includes 13 locations in Hanoi and 16 locations in Ho Chi Minh City. More than 50% of this list serves Vietnamese cuisine or street food, thereby emphasizing the widespread popularity and connection to local culture of street food such as Bun Cha Ta, Pho 10 Ly Quoc Su, Hello, Xoi Com, Bep Me In, etc.
The remaining 70 dining establishments recommended in the Michelin Guide list (32 in Hanoi and 38 in Ho Chi Minh City) are collectively called Michelin Selected dining establishments. In this list, street food and local cuisine once again dominate. 70 recommended dining establishments on the Michelin list
The Service Award was given to Nguyen Thi Nu from Vietnam House Restaurant (HCMC). She has a friendly service style, is knowledgeable about cuisine, wines and teas, and makes appropriate suggestions for customers. As someone who knows the menu and restaurant information well, she is always ready to communicate with customers with a constant smile on her face and demonstrates a proper service attitude.
The Sommelier Award went to Yu Yamamoto from Lua restaurant in Ho Chi Minh City. He is Japanese and manages about 70-100 types of wine. He not only blends sake in his own way, but also wants to promote wine culture in Vietnam.
The Young Chef Award went to Sam Tran from the one-Michelin-starred GIA restaurant in Hanoi. At the age of 33, Sam Tran is a talented Vietnamese chef, with culinary skills that showcase Vietnamese culture when preparing European dishes.
The list of 103 selected restaurants in the Michelin Guide Hanoi and Ho Chi Minh City 2023 is posted on the homepage and mobile application of Michelin Guide.
