In addition to cooking ribs, elephant foot yam is also used to make fish soup to eat with rice to cool down in the summer. However, many people do it wrongly, so when eating elephant foot yam soup, their mouths itch.
Here is how to make fish soup with elephant ear without fishy smell or itching to eat with noodles or rice.
Ingredient
Fish head (salmon, snakehead fish, carp, grass carp...) or can be cooked with perch.
Taro stem, tomato, fresh turmeric, star fruit, green onion, Vietnamese coriander, dill, seasoning powder, salt, fish sauce.
Making
Clean the fish head (remove the fishy smell by rubbing with salt), drain and fry in hot oil until fragrant. Be careful when frying so that the fish head does not get crushed or chipped. Then drain the oil and marinate with turmeric water (mash the turmeric, mix with water and filter again).
Wear gloves to avoid itchy hands. Peel the elephant foot yam, cut into diagonal slices and put in a basin of water mixed with salt. Soak the elephant foot yam for 30 minutes, then remove to a basket, drain, and gently squeeze with 2 tablespoons of salt.

Soak the elephant foot yam in clean water twice, for 15 minutes each time, then take it out and squeeze to drain all the water. Before cooking, remember to blanch the elephant foot yam in boiling water so that when cooking soup, the itchiness will go away.
Fry the shallots until fragrant, then add 4 tomatoes and stir well. Pour 1 bowl of water into the pot and bring to a boil. Then add the fish head marinated with turmeric, add the star fruit, and continue to boil until cooked. Mash the star fruit to give the soup a moderate sour taste. Next, add the elephant foot yam and boil for a few minutes, then sprinkle with chopped green onions, dill, and cilantro, then turn off the heat.
Northern style elephant ear fish soup has a light sour taste, refreshing, delicious with rice or noodles.
