
Located in southwest China, Chongqing is known for its noodle-centric cuisine , in stark contrast to the rice-based diet in the south. Here, noodles are not just a meal, but a staple throughout the day, reflecting the city’s vibrant culinary culture.
Known locally as mien (small noodles), these spicy noodles have transformed from a street snack into a booming industry, with an annual output value exceeding 56 billion yuan (about 7.9 billion USD).
Chongqing now has about 86,000 noodle shops, but the industry has historically been fragmented, with small family-run eateries struggling to maintain consistent flavors and branding. This has limited the ability to expand nationwide and drive industrial growth.
To solve the problem, Dai Dekou District learned the successful model of snail noodle soup in Liuzhou, Southern China, and began to industrialize snail noodle production.
In 2021, the County launched the Chongqing Xiaoan Industrial Park, integrating resources to develop “ready-to-produce and ready-to-cook” noodles. The industrial park attracted more than 80 enterprises, setting standards for noodle texture, chili oil spiciness, and seasoning ratio, ensuring consistent quality and enabling large-scale production.
“Strict quality control of toppings and sauces ensures consistent taste, allowing consumers outside Chongqing to enjoy the authentic taste at home,” said a company representative.
A local resident surnamed Li commented: “The tingling aroma of Sichuan peppers is the soul of Chongqing spicy noodles.”
As the industrial chain expands, Chongqing instant noodles are increasingly popular domestically and internationally. The city has designated instant noodles as a key specialty industry, generating more than 56 billion yuan a year, with daily sales of more than 12 million bowls, creating nearly 500,000 jobs.
At the Dadukou warehouse, prepackaged noodles are shipped globally through an international logistics network. In Los Angeles, American supermarkets have been selling Chongqing noodles for nearly two years, with companies like Yongheji Food gaining FDA certification and entering retailers like Costco.
With its strategic location, Chongqing serves as a trade gateway. Local companies export packaged noodles to more than 30 countries, including Thailand and Singapore, with annual export sales exceeding 40 million yuan.
Recently, ten projects on brand development, technology research and export were signed, with a total investment of 1.345 billion yuan, promising new impetus for international expansion.
