( Quang Ngai Newspaper) - Although over 50 years old, Ms. Do Thi Thanh, in Pho Truong village, Nghia An commune (Quang Ngai city), still boldly started a business with anchovy sausage products and was successful.

Living in a coastal commune, Do Thi Thanh and her husband have been involved in the fishing industry since they were young. Thanh's husband went to sea, and she worked as a fish trader. The fish trading job was hard, so when she got older and her children were grown, Thanh switched to producing anchovy fish cakes. "Anchovy is a type of fish with white meat and thin bones, often available all year round, so during family parties, I often make anchovy fish cakes. Many relatives and friends enjoy and praise the deliciousness, so they often ask me to make this dish. From processing for family use and following orders from acquaintances, gradually many people asked to buy, so in 2018 I decided to open an anchovy fish cake production facility called Loc Phat", Thanh shared.

Except for rough sea days, anchovies are caught by fishermen in Nghia An commune all year round. Taking advantage of the fresh anchovies source locally, Ms. Thanh has learned the recipe for processing and marinating to produce delicious fish cakes, preserving the natural sweetness of the sea fish. Ms. Thanh said that the anchovies used to make the cakes are caught fresh on the same day, not frozen. If frozen fish is used, the fish cakes will be dark in color, less sweet and not chewy. To have delicious anchovies, most of the production steps are done by hand. The fish cakes do not contain additives to ensure the health of consumers.

Currently, Loc Phat fish cake production facility supplies the market with 3 types of fish cakes: fresh, steamed and fried, mainly fried fish cakes. On average, each month, the facility supplies the market with nearly 800kg of various types of fish cakes, with a selling price of 120,000 VND/kg. Ms. Thanh said that there were times when the number of orders increased sharply but the facility did not have enough products to sell. However, I do not chase after quantity but try to maintain reputation and ensure product quality.

With a production process that ensures food hygiene and safety, fresh ingredients and a unique marinade recipe, Loc Phat's anchovy fish cake products have made a difference. Ms. Thanh's startup idea of ​​"Processing and consuming anchovy fish cakes" is one of 8 typical projects and ideas selected and awarded in the "Women's creative start-up, green transformation" Contest in 2024 organized by the Provincial Women's Union.
