Refreshing and easy to make, this Thai watermelon salad recipe combines sweet and spicy better than ever.

This summery combination of watermelon and Thai-inspired salad dressing will totally change your taste buds. This salad is gluten-free and can easily be made vegan.
With simple ingredients, it will take you less than 10 minutes to have a healthy dish.
Ingredient
- Fresh lemon juice: 50 ml
- Peel and grate ginger
- Green onions: 2 bulbs, thinly sliced
- Red pepper: 2, thinly sliced
- Fresh basil leaves, chopped
- Seedless watermelon: 1/2 fruit, sliced
- Cucumber: 2, thinly sliced or cut into small pieces
- Other fruits: peaches, cantaloupe... (depending on taste) diced and seeded
- Dry roasted peanuts, crushed
- Spices: fish sauce
Making
Step 1: In a large bowl, whisk together lime juice, ginger and fish sauce. Stir in green onions, chilli and basil.

Step 2: Add watermelon, peaches, peanuts to the bowl and mix well. Sprinkle basil and peanuts on top and serve immediately.
