Five-spice flying noodles in Hanoi arouse curiosity among diners

VietNamNetVietNamNet10/04/2023

To attract diners, a Chinese restaurant in Hanoi has created a unique five-spice flying noodle dish. Here, the chef uses ingredients such as fresh noodles, roast chicken, roast duck, roast pork... to adapt the Singaporean dish to Vietnamese tastes.

The impressive point of this "work" is its unique shape. Accordingly, the noodles are not in a bowl like normal dishes but are presented on chopsticks, suspended on a plate.

The secret to making the noodles "fly" is thanks to a cylindrical stick attached right in the middle of the bowl, accompanied by a pair of chopsticks that are cleverly attached. The noodles are squeezed into the chopsticks, covering the cylindrical stick, creating the feeling that an invisible hand is picking them up, while underneath are roasted meat, vegetables, and eggs soaked in soy sauce to eat with.

According to Mr. Do Minh Duong (owner of the restaurant), the key to creating the special flavor of flying noodles is the kumquat fish sauce combined with naturally fermented dried shrimp. The restaurant's spices are meticulously prepared, requiring a high level of knowledge in balancing the flavors of the chef when having to combine many types of soy sauce, dark soy sauce and fermentation.

The noodles used here are quite fresh, have a nice color, and are moderately chewy. Currently, the restaurant consumes an average of about 50kg per day. The price for the combo is 149,000 VND (about 2 people) and 259,000 VND (enough for 4 people).

Below the noodles are rich side dishes with Cantonese roast duck, soy sauce-soaked eggs served with boiled vegetables to prevent feeling full, rich in seasoning.

Chi Thom and her friends traveled nearly 15km from Dong Anh to come here to eat flying noodles for lunch. "I have eaten this dish many times and really like it. Besides the aesthetic factor, the flavor of the dish is still what I care about most. All the ingredients are marinated separately, richly, and when eaten together, they are very harmonious," she shared.

Having only appeared for more than 3 months at this small restaurant, flying noodles have quickly attracted young people, many of whom can take beautiful photos and upload them to social networks. This is especially a dish that is loved by families because it can create excitement for children.

In addition to flying noodles, this establishment also serves many Chinese dishes such as roast duck noodles, roast chicken noodles, char siu noodles, vermicelli, rice... priced from 45,000 VND/plate.

Each ingredient is prepared and processed by the chef himself.

In addition to direct sales, this restaurant's staff is also busy with take-away orders every day, with an estimated 35% of customers ordering online. The establishment sells 500-800 servings of noodles every day, with peak weekend sales reaching more than 1,000 servings, of which flying noodles account for the majority.

To enjoy truly delicious flying noodles, customers have the only option of eating directly at the restaurant because they can get the full flavor, while experiencing the most beautiful space and food presentation. This establishment has two busiest opening hours: from 10am to 2pm and 5pm to 10pm.

Thai Binh is not a place with many scenic spots but it makes tourists miss it with a series of unique rustic dishes.
