(HNMCT) - If there is one word to describe the cuisine of Cinque Terre, it is “traditional”. The people of the five villages still eat the same dishes that their ancestors ate centuries ago. All the ingredients are produced by the people themselves. If visitors want to know what Italians in the countryside eat, come to Cinque Terre to experience it.

Monterosso anchovies.

Monterosso anchovies are a brand that has been around since the Middle Ages. There was a time when Monterosso people paid their taxes in anchovies. There are many types for tourists to choose from, such as garlic fried anchovies, grilled stuffed anchovies, deep-fried anchovies, or salted anchovies sprinkled on pasta and pizza. Tourists should not forget to buy a few ounces of dried anchovies as souvenirs. The mussels caught in Monterosso are also famous for their quality, and tourists should not miss them.

Riso torta.

Torta di riso is a cake made from rice flour, crushed amaretti biscuits, vanilla seeds and lemon zest. Every housewife has her own recipe for torta di riso, passed down from her mother. The special thing about this dish in Cinque Terre is the way they add dried mushrooms to the cake to add umami (sweet taste). Every August 10, the people of Cinque Terre bake torta di riso to celebrate the feast of St. Lawrence.

Torte di verdure is another popular dish. Chefs stuff a torte di verdure with all sorts of vegetables, such as heliotrope leaves, parsley, oregano, artichokes, chard, eggplant, tomatoes, potatoes, leeks, etc. But eggs and ricotta cheese are always included. The crust is made from a mixture of flour and shredded dry bread soaked in milk. Taking a bite of a torte di verdure is like tasting the heavens of Cinque Terre.

Two types of wine: Cinque Terre white wine and Sciacchetrà red wine are mainly produced by farms in Cinque Terre. While Cinque Terre wine has a strong flavor thanks to the native Bosco grape variety, Sciacchetrà wine has a sweet taste, suitable for those who want to enjoy wine after a meal. Visitors do not have to worry about their lack of knowledge about wine. Just go to the enoteca (wine bar) to enjoy wine under the guidance of knowledgeable waiters. Or visitors can also go directly to the farms, not only to drink wine but also to experience the stages of the wine making and aging process themselves.
