Recreating lost dishes

Last year, The Cliff Resort & Residences (Mui Ne ward) organized a unique culinary event called “The Lost Recipes - recreating lost dishes in Phan Thiet”, aiming to restore and introduce to visitors the little-known ancient flavors of this coastal region. The program attracted many domestic and foreign tourists to enjoy dishes that once only appeared on family dinner tables or were still preserved in the memories of ancient Phan Thiet people.

The event organizers introduced many rare ancient dishes such as: duck with salt, chang chang cooked with star fruit or moringa, sweet potatoes stewed with sugar, banh hon, malt rice paper with shredded coconut, popped green rice... along with Phan Thiet specialties such as: dried mackerel with pandan porridge, Phan Thiet beef noodle soup, herring spring rolls with peanut fish sauce... According to the chefs, these traditional dishes are made from familiar, simple ingredients, but through the skillful hands of the chef, they bring unforgettable flavors.

Mr. Gork William - an American tourist who participated in the event shared: "Vietnam tourism , especially Mui Ne - Phan Thiet, has many similarities with Southeast Asian countries such as Thailand, Cambodia, Malaysia... Therefore, cuisine is the "magnet" that attracts tourists. I have been here many times and really love these coastal dishes".

Food promotion

In recent years, instead of going to restaurants, many tourists - especially young people - have turned to street foods shared on social networks such as tiktok, instagram, and facebook. Ms. Nhan Thi Hien, an American Vietnamese who used to live in Phan Thiet, said: "Last summer, my family and I returned to Mui Ne and, following the suggestions from the page "Phan Thiet Pho", we enjoyed a variety of rustic dishes such as: banh quai vac, banh trang mam ruoc, banh canh, cha cuon ca herp, mi Quang, rang muc, banh can, banh nam... Those simple dishes make people far from home like me recall the rich flavors and affection of Phan Thiet people."

These simple dishes are not only Phan Thiet specialties but also show the richness and diversity of coastal cuisine. Each dish has its own flavor, contributing to creating a unique culinary picture for tourists. Promoting street food through social networks is not only about "selling" but also about telling cultural stories, evoking memories and connecting the community.

One of the famous culinary destinations is Dung spring rolls restaurant on Vo Thi Sau street, which is over 40 years old. The herring spring rolls - a combination of herring and cassava - have become a "memorable" flavor for many generations. Ms. Hang, the person in charge of the restaurant, shared: "Inheriting from my grandmother, I continue to sell herring spring rolls and constantly improve the peanut dipping sauce. This is the factor that determines the flavor of the dish. The dipping sauce is mixed with Phan Thiet's typical fish sauce, with a harmonious salty, sweet, and spicy taste; in particular, the crushed roasted peanuts create a rich, fragrant flavor, making the flavor richer and unforgettable."

Taking advantage of local advantages, last year, the provincial tourism industry organized many survey programs, built products associated with experiences of traditional craft villages and cuisine. The goal is to form the product "Food tour" - culinary tourism, to increase the experience and prolong the stay of tourists. Along with that, the tourism industry also promoted, connected and developed unique culinary destinations, creating great attraction for domestic and foreign tourists.
