Binh Dinh is not only a land of martial arts but also famous for its diverse and rich cuisine . The Vietnam Culinary Culture Association (VCCA) has included 4 outstanding Binh Dinh dishes in the list of 121 outstanding national culinary dishes from 2022, which are Cha ram with shrimp, Nem Cho Huyen, Banh It La Gai and Bau Da wine.
Shrimp spring rolls

Inside the filling is ground pork belly marinated with minced shallots for fragrance. The pork belly will help the meat to be just soft enough. Wrapping the spring rolls is a crispy fried spring roll with a freshwater shrimp. This shrimp is a saltwater shrimp, long and slender about the size of a little finger. After rolling the spring rolls, deep-fry them until the shell is crispy, eat with fish sauce, garlic, chili and peanuts, and can be eaten with vermicelli or rice. Because shrimp spring rolls are popular and easy to eat and make, visitors to Binh Dinh can easily enjoy this dish in many places.
Nem Cho Huyen

But what makes it different from nem chua from other regions, especially Thanh Hoa , is that it is wrapped in young guava leaves. The spicy nem chua has the fragrant smell of guava leaves, creating a balance with the rich flavor of meat, pork skin and garlic. The nem is usually wrapped in a square shape, and when peeled, it has the characteristic leaf pattern. There are two ways to eat nem chua Cho Huyen: eat it raw or grill it to add more flavor. Tourists traveling to Binh Dinh can order nem Cho Huyen in vacuum-sealed bags, which is convenient and safe when traveling by plane.
Bau Da Wine

Famous for having a high alcohol concentration and getting drunk quickly, this wine is praised for not causing fatigue. The difference of this wine is that it is not made from regular rice, but from brown rice. The water used to make the wine is also said to be taken only from the Kon River to create a characteristic sweet aftertaste. The cooking process is also very elaborate, using a copper pot instead of an aluminum pot, the pot lid is made of terracotta, when distilling, it is also slowly and slowly over a simmering fire to extract all the essence of the rice and stored in bamboo tubes. Bau Da wine is not only used in drinking parties, but also used as a ceremonial wine in funerals and weddings.
Banh it la gai
Banh it la gai is characterized by its small shape. (Photo: Binh Dinh Province Information Portal) Also popular in the Northern Delta provinces, Banh It Binh Dinh is special because of its smaller size. According to propaganda, the cake originated from the reign of the sixth Hung King. Princess Ut, Lang Lieu's younger sister (the story of Banh Chung and Banh Day), wanted to make a dish that had the flavor of both Banh Chung and Banh Day. Therefore, she made a cake with a small size, showing her modesty before her brothers and sisters. The cake has a light aroma of the leaves in the cake dough, with green bean and coconut filling, and will be an elegant snack for friends and relatives after a trip to Binh Dinh.
Along with the remaining 117 dishes, these Binh Dinh gifts must meet 3 criteria: Having cultural-historical value in a certain region, having value in quality and production-processing-preservation technology, and having economic value and the ability to develop in the community. In addition to the above 4 dishes, Binh Dinh, the land of martial arts, also makes people remember My Cang jumping shrimp pancakes, vermicelli with song than made from green bean flour, My An sea urchin sauce, Tay Son beef jerky, eel salad, Tam Quan coconut water rice paper, Tam Quan pink cake...
