Ingredient
1kg of snails; 2 ears of sweet corn or buy 250gr of corn kernels; 50gr of butter (unsalted or salted butter is fine); 1 garlic bulb; 3 chili peppers; 1 small branch of ginger; Herbs, green onions or Vietnamese coriander as desired; 1 tablespoon of pork fat; Seasoning: seasoning powder, chili powder, sugar, fish sauce.
This dish is made from very simple ingredients that are close to us.
Making
First, rinse the snails under cold water, put 2 sliced chili peppers in rice water and soak the snails in it for about 2-3 hours to remove all the slime and dirt.
Then rinse the snails several times until the slime is gone, then scoop them out into a basket and drain. Next, boil the snails for about 2-5 minutes with 1 teaspoon of salt and 1 piece of ginger until the snail shells begin to open and peel off, then turn off the stove, pour the snails into a basket and drain.
Peel 1 garlic bulb, wash, crush and chop finely. Wash 1 fresh chili and chop finely. Separate 2 sweet corn kernels. A tip for you when separating the corn kernels is to place the corn horizontally on a cutting board, use 1 hand to hold the corn firmly, and use the other hand to hold the knife to cut the corn kernels from the cob.

After cutting one side of the corn, place that side down on the cutting board to create balance and support for easier cutting of the other sides, avoiding injury to your hand when using a knife.
Then you put the pan on the stove to heat the pan, add 50gr of butter and melt it, then add garlic and fry until fragrant. Add 1 teaspoon of chili powder if you like more spicy flavor for this dish.
Then add the snails and stir-fry with 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder and 1 tablespoon of sugar, stir-fry the snails evenly for about 5 - 10 minutes over low heat.
With just a few minutes of preparation and extremely simple ingredients, you have made an attractive, delicious and nutritious dish to treat the whole family.
Stir-fry the snails until the water in the pan thickens, then add the corn kernels and 1 tablespoon of pork fat and stir-fry for about 5-7 minutes. Season to taste, stir-fry for another 2-3 minutes and turn off the heat.
Depending on each person's feelings and preferences, you can decorate with green onions or Vietnamese coriander to eat with and enhance the flavor of the dish.
