The world- renowned food website TasteAtlas has compiled a list of the top 100 best meat dishes in the world based on reader reviews. Among them, Vietnamese dishes like beef stew and beef in vinegar sauce have made the list.
Beef stew is a familiar dish in many Vietnamese family meals. This dish captivates diners with its tender, flavorful beef, blended with the strong aroma of lemongrass, cinnamon, and star anise, the mild spiciness of chili peppers, and the natural sweetness from the carefully simmered broth.
Beef stew can be served with white rice, crispy bread, or noodles, making it perfect for cold weather, when just a hot bowl of beef stew is enough to warm your heart.

Besides beef stew, beef dipped in vinegar is also a familiar dish to Vietnamese people, especially in the central and southern regions. Fresh beef is quickly dipped in a mixture of vinegar, coconut water, lemongrass, and onions, then wrapped in rice paper with fresh vegetables and dipped in fermented fish sauce, creating a harmonious, light, and unforgettable flavor.
How to make authentic beef stew at home.
Ingredients for beef stew:
+ 1kg of beef (beef shank, brisket, or with added tendon for a crispier and tastier texture)
+ 1 onion, 2 stalks of lemongrass
+ Chopped onions, garlic, and carrots
Salt, sugar, fish sauce, pepper, cooking oil, seasoning powder
+ 1 – 1.5 liters of fresh coconut water
+ Beef stew seasoning (or alternative seasoning)
+ 100g pureed tomatoes
+ 1 cinnamon stick, 2 star anise (optional)
+ Cornstarch
How to make beef stew:
Step 1: Wash the beef thoroughly with salt and vinegar, then cut it into bite-sized pieces. Marinate the beef with chopped onions, garlic, and lemongrass, 2 tablespoons fish sauce, ½ tablespoon pepper, 1 tablespoon cooking oil, 1 tablespoon cooking wine, 1 tablespoon seasoning powder, and 1.5–2 tablespoons beef stew seasoning. Marinate for at least 1 hour or overnight to allow the meat to absorb the flavors evenly.

Step 2:
Sauté the onions, garlic, cinnamon, and star anise until fragrant. Add the crushed tomatoes and cook until softened, then add the beef and stir until browned. Pour in enough coconut milk to cover the meat, add the onions, and season lightly with salt and sugar. Simmer over low heat or use a pressure cooker until the meat is tender.
Step 3:
Once the beef is tender, add the carrots and cook for another 5 minutes. Season to taste. Mix 2 tablespoons of cornstarch with 4 tablespoons of water and gradually pour it into the pot to thicken to your desired consistency.
