Purslane is rich in vitamin C, beta-carotene, potassium, iron, and antioxidants such as flavonoids, offering numerous health benefits. Vitamin C boosts immunity and supports collagen production. Beta-carotene is good for eyesight; potassium regulates blood pressure and supports cardiovascular health… Antioxidants slow aging and reduce the risk of chronic diseases.
In particular, purslane has been studied for its potential to support people with gout. Extracts from the plant can inhibit the enzyme xanthine oxidase, reducing uric acid production and alleviating gout pain. Some trials have shown that purslane extract can reduce blood uric acid levels by up to 44%, helping to balance and prevent the disease.

Peel the frog meat, remove the head, and coat it in batter before frying until golden brown. Mix the purslane with vinegar or fresh lemon juice, then add the frog meat and mix well. Eating this dish 2-3 times a week is very good for people with diabetes.

Ingredients for chicken salad with purslane
Chicken, water spinach
Lemongrass, ginger, lime leaves, onion, garlic, chili peppers, peanuts, kumquats
+ Seasonings: fish sauce, sugar, salt, lemon
Making:
Step 1: Rub salt on the chicken, rinse thoroughly, and drain. Place the chicken in a steamer with lemongrass, ginger, lime leaves, and onion for added flavor. Once cooked, remove the chicken and soak it in cold water for about 5 minutes. Drain and let it cool, then shred it as desired.
Step 2: Remove the roots and damaged leaves from the purslane, wash thoroughly, and drain.
Step 3: Prepare the salad dressing: Combine 3 tablespoons sugar, 2 tablespoons fish sauce, 2 tablespoons lime juice, 1 tablespoon water, and 1 tablespoon minced garlic and chili. Stir well and adjust seasoning to taste.
Step 4: Place the shredded chicken and purslane on a plate, pour the dressing over them, mix well, and sprinkle with roasted peanuts.
