  • Herring salad: Fresh raw fish meat is mixed with grated coconut and onions, wrapped in rice paper with wild herbs, and dipped in premium Phu Quoc fish sauce.
  • Bun Quay: This dish gets its unique name from the way diners "stir" the dipping sauce themselves. The bowl is filled with fresh fish cakes and shrimp cakes, soft rice noodles, and a light, sweet broth.
  • Ham Ninh Crabs: Crabs from Ham Ninh fishing village are famous for their firm and sweet meat. Steamed crabs served with a simple dipping sauce of salt, pepper, and lime preserve their natural, fresh flavor.
  • Grilled sea urchin: Often referred to as the "ginseng of the sea," sea urchin is grilled over hot charcoal with scallion oil, resulting in a rich, fragrant flavor.
