How to make hot tapioca pudding:
Step 1: Choose long, oblong cassava, peel it, cut it into bite-sized pieces, and soak it in diluted salt water for 1 hour. Then, wash it, steam it until it is soft, and cut it into bite-sized pieces.
Step 2: Boil 100gr of palm sugar with 50ml of water, add the cut cassava and simmer for about 5 minutes to absorb the palm sugar. After simmering, remove the cassava and place it in another bowl. Simmering cassava with palm sugar helps the cassava have a beautiful color and taste better.
Step 3: Still in the same pot, add about 1.2 liters of water, add 200gr of palm sugar, pandan leaves, ginger and salt and bring to a boil. Mix tapioca starch with about 100ml of water, slowly add the starch and stir well over low heat to avoid burning. When the starch is cooked, turn off the stove, add cassava and shredded coconut and you have delicious cassava dessert. The dessert has a sweet taste from palm sugar and the soft texture of cassava. If you add some coconut pearls, the dessert will be even more delicious.
