400gr dry noodles, crispy fried onions, green onions, chopped cilantro, bean sprouts, chives, perilla leaves, herbs (basil, Vietnamese coriander...), good fish sauce, ground pepper, lemon, sliced chili.

How to make chicken noodle soup
Step 1: Prepare and boil the chicken
Wash the chicken with salt, vinegar or white wine to remove the smell. Boil about 3 liters of water, add grilled onions, grilled ginger, and white radish. Put the chicken in the pot, skim the foam frequently to keep the water clear.
Boil the chicken for about 30–35 minutes over medium heat. When the chicken is cooked, remove it and immediately soak it in a bowl of ice water to make the chicken skin firm, crispy and beautiful. Tear the chicken meat onto a plate, and set aside the bones.
Step 2: Simmer the broth
Continue to add the chicken bones to the pot of broth and simmer with the remaining ingredients for another hour to deepen the broth. Add salt and rock sugar to taste. Simmer over low heat, the broth will be clearer and more fragrant. Add the green onion tops to the pot.
Step 3: Prepare noodles
Blanch the noodles in boiling water until soft, remove, and toss briefly with a little cooking oil so the noodles don't stick together. Blanch bean sprouts and chives until half-cooked (if desired).
Put the noodles in a bowl, arrange the chicken, green onions, cilantro, and fried onions on top. Pour in the boiling broth, sprinkle with a little pepper. Serve with bean sprouts, chives, Malabar spinach, herbs, lemon, chili, and a bowl of pure fish sauce with a few slices of chili.

Tips to improve your dish
To make the chicken noodle soup more appealing, you can add soft-boiled eggs and boiled chicken gizzards to make the bowl of noodles more beautiful. If the broth is left overnight and reheated the next day, it will be even sweeter, similar to the style of long-standing restaurants.
