Banh chung is an indispensable dish during the Lunar New Year. One of the things that many people feel embarrassed about when eating banh chung is cutting the cake.
Because it is made from sticky rice, banh chung is very sticky and soft. If not cut carefully, the pieces of the cake will not only be uneven but also easily crushed, and the filling will fall all over the place. The most common way to cut banh chung is to use the string that ties the cake.

However, using bamboo strips to cut the cake is not simple because if you place the strips incorrectly, the cake will be crushed and the filling will be exposed.
Instead of using bamboo strips, some people choose to cut banh chung with a knife. However, there are many opinions that cutting banh chung with a knife is incorrect.

Cut banh chung with bamboo strips
With this traditional way of cutting banh chung, you just need to prepare an extra plate to hold the cake.
First, gently unfold the leaves. Separate the strings that tie the cake and place them on the surface of the cake. Place two strings perpendicular to each other to divide the cake into 4 equal square pieces. Then, place 2 diagonal strings connecting the 4 corners of the cake. Thus, you will cut 8 pieces of banh chung.
Note, remember the order of placing the strings. The string placed first will be pulled up first.
Now, simply turn the cake upside down (with the string on top) onto a plate. Peel off the remaining leaves.
Use both hands to hold the two ends of the bamboo strip and pull towards the middle of the cake to cut the cake into pieces.
If you pull the strings in the correct order, cutting the cake is very easy. Once you have cut the cake, do not lift the strings up too high because it will cause the meat inside to come out. Gently pull the strings out horizontally.
Cut banh chung with a knife
Many young people will like to cut banh chung with a knife because this way is quick and easy to divide the cake evenly.
However, because banh chung is very sticky, if you cut it directly with a knife, washing the knife later will be very complicated. Therefore, you should use plastic wrap to wrap 2-3 times around the knife.
Use large, long knives to make cutting easier. Small, short or blunt knives will make cutting more difficult, requiring repeated rotation, causing the cake to break.
Peel off the foil. Place the cake on a flat surface and use a knife to cut the cake into 8 pieces. Turn the cake upside down onto a plate and peel off the remaining foil. Finally, remove the plastic wrap from the knife.
In particular, if the banh chung is kept in the refrigerator and has hardened, it will be easier to cut with a knife because the sticky rice has hardened and is no longer sticky as before. After cutting, you can put the banh chung in a frying pan to heat it up.
