To make oil-free fried corn cakes, you need to prepare the following ingredients:
- Corn: 2-3 sweet corns
- Flour: 100gr
- Cornstarch: 50gr
- Chicken egg: 1 egg

- Salt: 1/2 teaspoon
- Baking soda: 1/2 teaspoon
- Unsweetened fresh milk: 100ml
- Vanilla: 1/2 teaspoon.
Wash the corn and separate the kernels. If you use frozen corn, you need to defrost it before cooking. Boil a pot of water, add the corn kernels and cook for about 3-5 minutes until the corn is cooked, then remove and drain.
Add flour, cornstarch, baking soda, sugar and salt to a large bowl and mix well. Crack the eggs into the flour mixture, then add the fresh milk and vanilla. Use a whisk to stir until the mixture is smooth and lump-free. Next, add the boiled corn kernels to the flour mixture and mix well to coat the corn kernels.
Line a baking sheet with parchment paper or lightly oil the surface of the pan or baking tray to prevent sticking. Spoon the corn and flour mixture into the pan and spread evenly into small, medium-thick patties.
Preheat the oven to 180°C for about 10 minutes. Place the baking tray in the oven, bake for about 15-20 minutes until the cake is cooked and has a nice golden color. You can check by using a toothpick to poke into the cake, if the toothpick is dry and does not stick to the dough, the cake is done. If you use an air fryer, bake the cake at 160-170°C for 10-15 minutes.
