Son Thach (from Nghe An province) has lived and worked in Angola for many years.
Besides assisting the local people with their farming , he also frequently cooks typical Vietnamese dishes such as stir-fried beans with chicken gizzards, pig ear salad, roasted pork, chicken rice, grilled pork vermicelli, and bread with wine sauce… to introduce them to the locals.
In a recently uploaded video , Thach visits a farm in Malipi village and prepares a popular Vietnamese dish to treat the locals: fried eggs with perilla leaves.


Son Thach said that due to the lack of proper food and living conditions, the people here often experience digestive problems, especially diarrhea.
Meanwhile, according to Vietnamese folk experience, the leaves of the hairy fig tree are used to cool the body, kill bacteria, and treat digestive problems such as stomach pain, diarrhea, indigestion, and bloating.
Therefore, when he saw a Vietnamese family living in the city who had grown a lot of hairy fig leaves, Thach decided to ask for some to pick and use in his cooking.

This man also introduced Sambaio, the Angolan man who often helped him with farm work, to the uses of the hairy fig leaf and how Vietnamese people prepare dishes using this leaf.
"These guava leaves have many uses, but the most common is treating stomach pain and diarrhea," Thach told Sambaio.
He also shared that star anise leaves can be eaten raw or cooked, with the most popular and favored dish being fried eggs with star anise leaves.
The star anise leaves are washed, finely chopped, then eggs are added and stirred well, seasoned with a little salt to enhance the flavor and make it more appealing.

During the preparation process, Mr. Thach also meticulously instructed the villagers on how to make delicious fried eggs with star anise leaves. When they have the means and ingredients, they can cook it themselves for their families, adding variety to their meals, supplementing nutrition, and aiding in the treatment of digestive problems.
Once the eggs were fried, he arranged them on a tray and brought them to the dining area to share with the farm workers.
He also set aside some fresh star anise leaves, kept separately so that people could observe and taste the original flavor of this type of leaf.
"This is both a vegetable and a medicine; eating it is very good for your health," Thach added.

Sambaio tasted the fresh star anise leaves and remarked that they had a slightly bitter taste. But when he tried the fried eggs, he was surprised by how much better and more palatable they were, nodding repeatedly and giving a thumbs-up to show his satisfaction.
"It's really delicious," Sambaio said.
The young man also introduced the locals to Vietnamese-style fried eggs with star anise leaves, explaining the ingredients, cooking method, and amazing health benefits. After hearing this, everyone was very excited. They were all eager to taste the delicious dish.
While eating, some people exclaimed "chapepa" (amazing), readily praising this simple yet delicious and nutritious Vietnamese dish.
