Rare beef pho
Being the highest Vietnamese representative on the list, at number 5. Pho bo ra chin is a version of pho bo, made from well-done beef and rare or medium rare beef. Other versions of pho bo also appear on the list such as pho bo with many ingredients such as brisket, flank, tendon, meatballs, oxtail... (number 11). There are also pho tron and pho xao versions.

Grilled meat noodles
Popular in the South, this dish is a combination of grilled marinated pork served with vermicelli noodles, greens and herbs. The ingredients are usually placed in a bowl and then combined with dipping sauce - a type of fish sauce mixed with lime, water and sugar.

This is a popular dish with two basic ingredients including vermicelli and stir-fried beef along with other supporting ingredients including herbs, carrots, cucumbers, lettuce, bean sprouts, roasted peanuts...
Bun Cha
The dish combines three elements: a bowl of meatballs and grilled pork served with a cold broth, a plate of rice noodles, and a variety of greens such as perilla, lettuce, coriander, and water spinach. Although bun cha or similar varieties can be found in other parts of Vietnam, the Hanoi version is still highly regarded. Little is known about the history or origins of the dish, but it gained international recognition in 2016 when it was featured on Parts Unknown , where host Anthony Bourdain enjoyed bun cha with former US President Barack Obama.
Quang noodles
This classic Vietnamese dish combines yellow noodles with a small amount of rich meat broth and fresh, crunchy vegetables such as banana blossom, lettuce, cilantro, spring onions and herbs. The dish is extremely versatile and is often served with pork belly, chicken, shrimp, fish, boiled eggs, roasted peanuts... Although originating from the central region, more specifically Quang Nam province, Quang noodles are now loved throughout the country.

A famous Vietnamese street food originating from Cambodia, named after the capital Phnom Penh (Nam Vang) and the recipe was adjusted to suit Vietnamese taste. The noodle dish must have a clear and rich broth simmered from pork bones, pork, dried squid and shrimp.
Cao Lau
Hoi An’s signature dish consists of noodles made from locally grown rice and water from a local well. Along with the noodles, a bowl of cao lau also includes thinly sliced roast pork, greens, bean sprouts and just a splash of flavorful broth.
The origins of this dish are murky, and while some believe it was inspired by Chinese cuisine , others say it was modeled after Japanese culinary traditions. Regardless of its origins, cao lau is a unique delicacy that cannot be found outside of Hoi An. The top two dishes on the list of Asia's 100 best noodle dishes are Thailand's khao soi and Japan's ramen.
