Oysters are available year-round. People living along the lagoon often use blunt machetes to skillfully pry open the oyster “shrubs” that cling tightly to the rocks. Inside the rough, craggy shells is opaque white meat, the body as if soaked in milk.

According to culinary experts, O Loan oysters have sweet, fatty and fragrant meat, which can be processed into many attractive dishes such as: grilled oysters with scallion oil, fried oysters with eggs, stir-fried oysters with squash, raw oysters with lemon..., but to fully experience the sweet taste and characteristic aroma of oysters, there is nothing better than oyster porridge. The way to cook this dish is very simple: white porridge is cooked until soft, the oysters are washed, the meat is separated, lightly seasoned and then stir-fried with fragrant shallots before being put into the porridge pot. When the porridge is cooked, just sprinkle a little pepper, onion, coriander, and shredded ginger to have a bowl of hot, fragrant oyster porridge. In some restaurants, people also beat eggs into the porridge, creating a fatty and nutritious oyster egg porridge.

A unique feature in the way of enjoying oyster porridge of the people in the East of Dak Lak is to eat it with grilled sesame rice paper. Grilled sesame rice paper has a fragrant, light fatty taste of sesame. When eating, break the rice paper into pieces and put it in the porridge, which helps the dish cool faster and creates a crispy, strange feeling, mixed with the sweetness of oysters and the aroma of onions and cilantro.

Tourists can easily enjoy oyster porridge at seafood restaurants or breakfast restaurants specializing in this dish on Nguyen Hue and Le Loi streets (Tuy Hoa ward). In the chilly weather, inhaling a bowl of hot oyster porridge with a crispy rice paper is a culinary experience rich in the flavor of the sea that anyone who has tried it once will remember forever.
