The East of Dak Lak has many attractive seafood dishes, including delicious dishes made from oysters in O Loan lagoon, a national scenic spot in O Loan commune.

Oysters are available here year-round. Locals along the lagoon skillfully use blunt machetes to pry the oyster clusters clinging tightly to the rocks. Inside the rough, gnarled shell is milky white flesh.

According to culinary experts, O Loan oysters have sweet, fatty, and fragrant meat, and can be prepared into many attractive dishes such as: grilled oysters with scallions and butter, fried oysters with eggs, stir-fried oysters with zucchini, oyster sashimi with lemon, etc. However, to fully appreciate the delicate sweetness and characteristic aroma of oysters, nothing beats oyster porridge. The cooking method is very simple: white rice porridge is cooked until soft, oysters are washed, the meat is extracted, lightly seasoned, and then briefly stir-fried with fragrant shallots before being added to the porridge. When the porridge is cooked, simply sprinkle with a little pepper, scallions, cilantro, and shredded ginger to create a hot, fragrant bowl of oyster porridge. In some restaurants, eggs are added to the porridge, creating an oyster and egg porridge that is both rich and nutritious.

A unique way for people in eastern Dak Lak to enjoy oyster porridge is to eat it with grilled sesame rice crackers. The grilled sesame rice crackers have a fragrant, slightly rich sesame flavor. When eating, crumble the crackers and add them to the porridge; this helps the dish cool down faster and creates a crunchy, unique texture that blends perfectly with the sweetness of the oysters and the aroma of scallions and cilantro.

Tourists can easily enjoy oyster porridge at seafood restaurants or breakfast eateries specializing in this dish on Nguyen Hue and Le Loi streets (Tuy Hoa ward). In the chilly weather, savoring a hot bowl of oyster porridge with a crispy rice cracker is a culinary experience rich in the flavors of the sea that anyone who tries it once will remember forever.
