Young green rice - a rustic gift from the Vietnamese countryside is attracting a large number of consumers at the first Autumn Fair - 2025. The green rice product not only has culinary value but also contains cultural value, expressing Vietnamese identity associated with Autumn.

The green rice products appearing at this year's Fair evoke many fond memories of the image of bareheaded, barefooted children calling each other to pick sticky rice in the fields to make green rice.

The first Autumn Fair - 2025, taking place at the National Exhibition Fair Center (Dong Anh, Hanoi), is not only a place to promote typical agricultural products but also contributes to connecting craft villages and businesses with the market. Here, delicious, soft green rice grains and improved traditional products are blending into the modern commercial flow.

Mr. Nguyen Duy Bich, in Bac Lung commune, Bac Ninh province, shared: For generations, green rice has been a traditional dish of people in many provinces and cities across the country. This product is made from young sticky rice, that is, green or unripe rice grains. When the husk is removed to get the grain inside, the young grain is used to make green rice, which has a natural light green color, is soft, chewy, has a mild aroma and has the characteristic flavor of new rice.

Nowadays, green rice is not only consumed in its traditional form (young green rice, fresh green rice) but is also processed into many new product lines, suitable for modern tastes and convenient for preservation and long-distance transportation.

Recalling his childhood of picking sticky rice from the fields to make green rice flakes, Mr. Bich said: “Every year, around mid-autumn, the sticky rice is about to ripen. At that time, my friends and I often gathered to collect sticky rice and bring it home to ask my grandmother or mother to make green rice flakes. The young sticky rice grains were roasted to a fragrant aroma and pounded in a stone or wooden mortar, and through the process of removing impurities, we had a new batch of green rice flakes. The whole family gathered to enjoy green rice flakes, immersing themselves in simple joy. Now, when I come to the fair and see the stalls selling green rice flakes, I feel like I am reliving the familiar flavors and memories of my childhood.”

Ms. Nguyen Thi Thuy Hien, in Me Tri (Hanoi), owner of a green rice production facility, said: “My family brought dozens of products to this year’s Autumn Fair such as young green rice, green rice sticky rice, fried green rice, green rice cakes, green rice xu xue cakes, green rice mochi cakes, green rice sausages, and green rice sausages. In addition, the facility also introduced new products such as green rice yogurt, green rice milk tea, and green rice ice cream to serve customers.”

Ms. Hien added: The raw materials used to make the products are all from young sticky rice, carefully selected. The family's traditional green rice products are still produced by hand. The product packaging is made from lotus leaves, banana leaves, and taro leaves; the strings are made of straw or dried tree bark and absolutely no preservatives are used.

According to Ms. Hien, the process of making green rice, especially traditional green rice, requires meticulousness and elaboration in each stage: from selecting rice, roasting, pounding, sifting to packaging with leaves to preserve the aroma, green color and softness. Therefore, the green rice products displayed at this year's Autumn Fair received great attention from consumers, many people bought them to enjoy or give as gifts. Ms. Hien's booth alone welcomed hundreds of visitors every day.

At the first Autumn Fair - 2025, there were dozens of booths displaying and introducing green rice products to consumers, which were well received by customers. In addition to traditional products, many production facilities have innovated with product lines such as vacuum-packed fresh green rice, dried green rice, and dried green rice to extend the shelf life. In particular, there are also many pre-processed products such as green rice cakes, green rice candy, green rice balls, green rice milk, green rice ice cream, etc. to serve diverse needs and create more choices for domestic and foreign customers.

Mr. Nguyen Minh Trung, from Me Tri Ha (Hanoi) - who is introducing and selling green rice products at the fair, shared: "My stall not only has traditional green rice but also many improved products, processed from young sticky rice. Each green rice grain, whether traditional or improved, is a symbol of autumn, of purity, expressing the quintessence of folk culture, reflecting the ingenuity and love for the homeland of the Vietnamese people."
