The taste of flood season with linh fish

Linh fish is a white fish that lives in flowing water, so it only appears during the flood season, and usually eats algae. Linh fish has a lot of protein, high nutritional content, easy to prepare and cooks quickly, sweet meat so it is often loved by tourists.

With linh fish, people can also prepare many delicious rustic dishes such as: linh fish braised with pepper, braised with salt, braised with sugarcane, fried, sour soup with sesban flowers and chopsticks or hot pot with fish sauce. The way to prepare the dishes is also simple and quick. The fish is washed, slimed with a little salt. With young linh fish, milk linh fish, people often keep the fish whole for processing; as for late-season linh fish, large fish, the intestines in the fish's belly are usually cleaned and removed. When the fish is cleaned, it can be dipped in hot pot, cooked in soup with a rustic, naturally sweet flavor.

In addition, linh fish is often loved when fried. For those who like the natural flavor, just fry it in a pan with oil to have crispy fish. If not, the fish can be marinated with a little salt, or coated with a little frying flour to create a new flavor. Fried fish has a sweet, fatty, crispy taste, mixed with the aroma of garden vegetables, very unique.
