Often referred to as the "green gold" of the highlands, artichokes have become a stable source of income for many households. Thanks to the cool climate and suitable soil, Sa Pa artichokes have a distinctive flavor and high medicinal content, making them a typical agricultural product of the region. The harvest season lasts from October of the previous year to May of the following year, with people harvesting 7-8 batches of leaves followed by flowers each season. During the harvest season, the hillsides of Sa Pa are bustling with laughter and conversation as people busily pick the leaves. Artichokes not only bring economic value but also contribute to the beauty of the highland landscape and the people's labor.
