Ingredients for stir-fried crab vermicelli
1kg crab, 200gr cellophane noodles, chicken eggs, wood ear mushrooms, carrots, onions, shallots, garlic, bean sprouts, green onions, cilantro, Vietnamese coriander, fresh chili.
Seasoning: sesame oil, fish sauce, soy sauce, MSG, seasoning powder, sugar, pepper.

Raw material preparation
Glass noodles: Soak in cold water for about 15-20 minutes until soft, then remove and drain. Mix the glass noodles with 1 tablespoon sesame oil and a little soy sauce to prevent the noodles from sticking together and to make them flavorful when stir-fried.
Crab meat: Steam the crab until cooked, then separate the meat and crab fat.
Vegetables: All mushrooms, carrots, onions are prepared and sliced as above.
Eggs: beat eggs, fry thinly, slice into strips to stir-fry together or sprinkle on top at the end.
How to prepare
Stir-fried crab meat:
Saute minced onion and garlic with a little cooking oil. Add crab meat and crab roe, season with a little fish sauce, pepper, and sugar for flavor. Saute for about 2-3 minutes until fragrant, then scoop out and set aside.
Stir-fried vegetables:
Using a large pan, saute garlic until fragrant, add carrots, black fungus, shiitake mushrooms, and onions and stir-fry until cooked. Season with a little seasoning and pepper to taste, then set aside in the pan.
Stir-fried vermicelli
Add the vermicelli to the vegetable pan, mix well over medium heat, stir quickly. Season with the spice mixture: 1 tablespoon soy sauce, 1 tablespoon fish sauce, ½ teaspoon sugar, pepper, a little sesame oil. You can add a few spoons of crab broth (if available) to make the vermicelli softer, sweeter and more fragrant. When the vermicelli starts to firm up, add the stir-fried crab meat and stir well.
Finally add fried egg strips, green onions, Vietnamese coriander, stir gently and turn off the heat.
Place the noodles on a plate, sprinkle with ground pepper, sliced chili, coriander and roasted peanuts (if desired).
Serve with soy sauce or chili garlic fish sauce if you want it more flavorful.
Tips from a veteran chef
Do not soak the vermicelli for too long to avoid breaking when stir-frying. Stir-fry the vermicelli last, over medium heat and stir quickly to avoid sticking.
Do not stir-fry the crab meat for too long, it will dry out and lose its sweetness. Add sesame oil and soy sauce to the vermicelli before stir-frying to prevent the noodles from sticking together and give it a light Asian-style aroma.
If you want the dish to be more luxurious, you can add salted crab eggs or shrimp.
