The demand for purchasing and storing food – including eggs – is a major concern for many people because, according to weather forecasts, from October to December 2024, many storms and tropical depressions will affect Vietnam, mainly in the Central and Southern provinces. The nutrients in eggs also include vitamin D, which helps the body absorb calcium more effectively, preventing osteoporosis and strengthening hair and nails. The amino acids and other minerals in eggs also benefit the brain and nervous system, reduce the risk of biochemical imbalances, cardiovascular diseases, and aid in weight loss (because eggs provide a longer feeling of fullness).

How to store eggs in the refrigerator

Most housewives store eggs in the tray inside the refrigerator door. However, according to Dr. Tran Hoang Hai's personal post, storing eggs in trays attached to the refrigerator door inadvertently creates favorable conditions for the growth of Salmonella enteritidis bacteria – which causes stomach illness (found in egg yolks). Frequent opening of the refrigerator door also causes temperature changes, reducing the freshness of the eggs.

Furthermore, storing eggs in the refrigerator door tray at low temperatures reduces the activity of enzymes in the eggs – meaning the lower the temperature, the lower the nutritional value of the eggs.

Furthermore, when eggs are taken from the refrigerator and left at room temperature, condensation forms on the surface of the eggshell. These tiny water droplets provide a good breeding ground for bacteria, which then penetrate the eggshell, causing the eggs to spoil quickly and lose their freshness.

Other information also indicates that the refrigerator door is not suitable for storing eggs because the temperature fluctuates each time the door is opened and closed. Therefore, eggs and other foods stored in the refrigerator door are more likely to spoil than those stored in the refrigerator compartment. For better preservation, arrange the eggs on a tray and place them deeper in the refrigerator compartment.

According to Dr. Tran Hoang Hai, eggs can stay fresh for 5-6 weeks if properly refrigerated. However, nutrition experts recommend storing eggs for a maximum of 30 days in a cold environment (if you buy eggs from the market, they should only be stored for about 3 weeks from the date of purchase). But please note:

- Wipe the eggs clean before storing them in the refrigerator to remove dirt and bacteria from the eggshells that could affect other foods (this step can be skipped if you buy eggs from the supermarket).

- Place the eggs in a container (paper box, plastic box, or specialized tray) and put it deep inside the refrigerator. Do not place the eggs in the tray on the refrigerator door. This will help minimize the loss of moisture from the eggs.

- Remember to place the smaller end of the egg down and the larger end up - this prevents the yolk from sticking to the slimy shell inside, keeping it fresh longer. Storing eggs at 25-32°C will keep them fresh for about a month.

- Eggs taken out of the refrigerator should be cooked within 2 hours. If left out longer, bacteria may accumulate.

Traditional methods of preserving eggs

According to Ms. Nguyen Thi Van (an egg trader in Bac Ninh ), eggs can be preserved for 7-10 days if stored at room temperature in a dry place, away from direct sunlight. However, there are many traditional methods for preserving eggs, such as the following:

Lime water preserves the eggs.

Prepare a lime solution with a concentration of 2-3%. Clean the eggs, arrange them in a jar/container, and pour the lime solution over them, ensuring the water level is 20-25 cm higher than the eggs. Place the jar/container in a cool, well-ventilated place, away from direct sunlight, to keep the eggs fresh for 2-3 months.

Salt preserves fresh eggs.

Spread a layer of salt at the bottom of the styrofoam container, place the eggs on top, and then sprinkle more salt to completely cover them. Continue arranging the eggs and covering them with salt until all the eggs are used. Place the container in a cool, airy place, and the eggs can be preserved for up to a year.

Beans preserve the eggs.

Layer various types of beans (black beans, mung beans, red beans, soybeans, etc.) in a styrofoam container along with eggs, alternating layers of beans and eggs until the beans are completely covered. Then, store the styrofoam container in a cool, shaded place, and you will have fresh eggs for a whole month without needing a refrigerator.

Preserve eggs using rice husks and sawdust.

Pour layers of rice husks/sawdust into a Styrofoam container, then arrange the eggs on top until all the eggs are used. Finally, cover the entire surface with rice husks/sawdust, seal the container tightly, and place it in a cool, well-ventilated place.

Nowadays, there are several ways to preserve eggs using aluminum foil and cooking oil, such as the following:

Aluminum foil for preserving eggs

Clean the eggs, wrap each one individually in aluminum foil, and place them in a cardboard box. Then, store them in a cool, dry place; they will last for one month.

Brush cooking oil onto the egg.

Clean the eggs and then brush a thin layer of vegetable oil (sesame oil, coconut oil, soybean oil, etc.) onto the shells - they can be preserved for a month while maintaining good quality.

Note that people should only wipe the shells of eggs clean before storing them. Eggs should not be washed with tap water, as this will remove the natural protective membrane that prevents bacteria from entering the egg and will also reduce its shelf life.
