Squid rolls - a delicious dish by the waters of Ha Long

Ha Long squid cake is a famous specialty of Ha Long sea, Quang Ninh, Vietnam. This dish has been recognized by the Vietnam Record Book Center as one of the 50 famous specialties of Vietnam.

Squid patties are made from fresh cuttlefish, usually caught in the waters of Ha Long or Van Don. The cuttlefish from these areas have firm, sweet meat, a distinctive milky white color, and are not fishy. The special feature of Ha Long squid patties is the handcrafted processing method, especially the hand-grinding step . The cuttlefish is pounded using a stone mortar, which helps to retain the characteristic crispness and chewiness that machine-made patties cannot match.
