Federico Pinzi likes to be called Feder. He is an Italian chef who has lived and worked in Vietnam for many years.
According to Feder, Italians are a bit conservative with their food. This is not a bad thing. Simply put, they have too much pride in their homeland's cuisine . They love what is traditional and do not like too many variations and innovations.
For example, pizza with tomato sauce or pineapple on top is very normal in Vietnam or other countries. However, in Italy, they want to make sure that when you buy pineapple, it will not be used to put on pizza. For them, there are values that cannot be changed. And don't be "foolish" to order a cappuccino in Italy at noon. You will be "thrown" a strange look.
However, that was the story in Italy. In Vietnam, Feder had to change to better integrate into this vibrant environment and always love new things.
