Recently, Seonguk and Simon, two Korean guests, shared a video of their first time enjoying Hue cuisine.

These two guys have both lived in Vietnam for 5 years and are learning Vietnamese. They love Vietnamese food , landscapes, and people and want to share happy moments in the S-shaped country on the YouTube channel called "3 brothers".

The couple went to a restaurant on Nguyen Quy Canh Street, Ho Chi Minh City. The restaurant specializes in Hue specialties such as Hue beef noodle soup, mussel noodle soup, mussel rice, vermicelli with fish sauce, grilled pork noodle soup, banh beo, grilled pork rice, and Hue desserts.

With the enthusiastic introduction of the staff, the couple ordered 2 bowls of Hue beef noodle soup, 1 bowl of mussel rice and 1 portion of banh beo. Seonguk and Simon went to the counter to see the ingredients of these famous Hue specialties. They felt assured about the taste as the staff here were all Hue people.

When the staff brought the food to the table, Seonguk and Simon were both surprised by the "super big" bowl of beef noodle soup, very full with pig's feet, crab cakes, blood... served with a large bowl of raw vegetables. A bowl of colorful mussel rice and white rice cakes were placed next to it.

They knew about beef noodle soup, but it was the first time they'd heard of clam rice. Seonguk was so curious that he immediately tried a spoonful of clam rice. "Wow, it's super delicious," he said. He'd never eaten it before, but he found the flavors surprisingly harmonious. Simon tried it too and nodded in approval. They kept scooping up spoonfuls of rice, admitting they were "losing their composure because the food was so good."

Clam rice is a rustic dish, yet its preparation is elaborate and refined. The ingredients include cooled white rice, clams, and accompanying vegetables such as lettuce, coriander, mint, mustard greens, roasted peanuts, sesame seeds, and shrimp paste. The clams are cleaned, their meat extracted, and then stir-fried with onions, lard, dried bamboo shoots, and shredded pork until very dry.

Two Korean diners thought mussels were "baby clams", completely unaware of how delicious they tasted. "So delicious, so unique", Simon praised repeatedly.

When it comes to Bun Bo Hue, while Seonguk likes to add a lot of raw vegetables, Simon does not add this ingredient. The delicious broth makes them excited. They nod because the crab cake is chewy, crispy, and delicious. The pork leg and beef shank are both fresh and very appealing to eat.

Bun bo Hue is recognized by the Ministry of Culture, Sports and Tourism as a National Intangible Cultural Heritage. A bowl of authentic Hue beef noodle soup has a fragrant broth of lemongrass and shrimp paste. Each chef has his own secret recipe, making Bun bo Hue at each restaurant a little different.

In 2014, famous culinary expert Anthony Boudain introduced Hue beef noodle soup on American television channel CNN as "the most wonderful soup I have ever tasted".

In 2016, Hue beef noodle soup was included in the list of Top 100 dishes with Asian value by the Asian Record Organization. In 2023, Taste Atlas - a famous international food website - ranked Hue at position 28 in the 100 cities with the best food in the world, with Hue beef noodle soup considered "one of the must-try Hue dishes when visiting."

In May, Hue beef noodle soup was again announced by Taste Atlas in the list of 100 best breakfast dishes in the world.

Trying the soft and smooth banh beo dipped in fish sauce, Simon exclaimed: “I want to live in Hue, to eat delicious food every day. Being a Hue person is really great.” He turned to the restaurant owner and said excitedly: “Every dish is delicious. I can’t stop praising it.”

The two Korean diners finished everything they ordered and said they would return soon, even bringing their friends. “Next time, we will each order a bowl of mussel rice,” Seonguk and Simon said excitedly.
