Mother and daughter "start a business" together

Previously, Ms. Hong Ngan's job was to sell teddy bears and small handmade items right on the road from her house to the alley entrance. After selling for a while, the epidemic broke out again in Ho Chi Minh City, and during the social distancing period, she had to sell online to have money to pay for her rent. But then gradually, Covid became more and more intense, she was forced to stop working and had no income for several months.

However, as a person with a great passion for food, Ms. Ngan has cherished her own small restaurant in Ho Chi Minh City since she was a child. After the end of the pandemic, starting from her mother's dream, she was determined to open a vermicelli soup cart with a super large 300-liter broth pot that surprised everyone.

300 liter broth pot, rich and eye-catching colors

"I often whisper to Ngan that we want to open a vermicelli soup shop together, trying to save money to buy a cart to open a shop so that later she can have a more stable income. Also because the small pot is not enough to sell, I decided to use a 300 liter pot to be able to sell more. Many times when I was sick and had to stop selling, many customers came to my house to ask to buy, I felt sorry for her and did not dare to stop selling because I was afraid that customers would miss her," said Ms. Nguyen Thi Thu (52 years old).

All ingredients are carefully selected by Ms. Ngan and her children.

This giant pot of broth is displayed right on the cart, all diners can see it. The rim of the pot is always full of toppings and the inside is always simmering, hot and ready to serve. It is known that the broth pot is selected by Ms. Ngan and her daughter every day from quality bones, herbs, vegetables, fruits,... other secrets. Because the secret to the restaurant's success, the broth recipe has never been revealed.

Nearly 300 liters is not enough to sell.

Visiting Ms. Ngan and her daughter's crab noodle shop at 1 pm, I ordered a full bowl of crab noodle soup, but had to wait nearly 20 minutes for it to arrive. Ms. Ngoc shared that because she had just sold out the lunch batch, she reduced the heat, and if customers came to buy, they had to wait, because she had to wait for the water to boil before selling.

Sharing with Thanh Nien, Ms. Ngoc said that her shop sells nearly 300 liters of broth every day, sometimes almost all by noon. Her and her mother's customers are mainly laborers and motorbike taxi drivers. People come here to eat and then ask to stay overnight to avoid the sun.

30,000 VND vermicelli soup with crab soup, full toppings

"My mother and I usually wake up at 2 or 3 in the morning, buy ingredients, and prepare broth and raw vegetables... The ham I use is lean, fresh every day. I never sell frozen products. Because I think that even if I sell on the street, it must be of good quality, only then will customers come back to me for a long time," Ms. Ngan confided.

Many people were amazed to see the giant pot of broth with their own eyes.

A bowl of noodles sold by Ms. Ngan and her daughter costs 30,000 VND, and if you want to add crab paste, it costs 35,000 VND/bowl. The crab paste and ham are all prepared by Ms. Ngan and her daughter. Ms. Ngan said that a quality piece of crab paste is one that does not break when put into a bowl of noodles, is not too long when eaten, and can clearly taste the fatty taste of crab paste.

Everyone who came to eat praised the delicious food.

There were days when Ms. Ngan was exhausted and wanted to close the shop for a few days, but customers kept calling to find her. Ms. To Thi Hoai (41 years old, Tan Phu District) often came to Ms. Ngan's mother and daughter's shop for lunch and found the broth there to be very light, the shrimp paste was also a good type of fish sauce, when stirred it would foam, and dipping it with ham and sausage was perfect.

"I am a laborer. If I eat well at noon, I will have the energy to work in the afternoon. The shop owners here sell cheaply but are enthusiastic. Some days I can't sell anything, they give me less food, and I can come back later. Some poor people come here, they give it away instead of selling it," said Ms. Hoai.
