"To make this dish, the cook must choose high-quality catfish; in some places, they even use the meat of the rare Anh Vu fish to make fish cakes," Taste Atlas describes.
Accordingly, after cleaning the fish, the flesh from both sides is filleted and marinated with a mixture of spices including galangal, fermented rice paste, shrimp paste, turmeric, pepper, etc. After a few hours, the fish meat is skewered onto bamboo sticks and grilled over charcoal.
When eating, the fish cakes are served on a pan right at the table, along with a variety of side dishes such as vermicelli noodles, herbs, mint, scallions, roasted peanuts... and dipped in shrimp paste.
Earlier in February, La Vong fish cake also secured one of the top three positions in Taste Atlas's list of the 100 best seafood dishes in Asia.
Founded in 2015, Taste Atlas is known as a map that compiles traditional dishes from around the world.
According to Matija Babić, founder of Taste Atlas, food and drink ranking lists are based on opinions and reviews from experts and food critics to ensure the credibility of the awards.
Also on the list of the 100 best dishes in the world made from white fish, Peru has the most dishes in the top list with 9, including Ceviche, Jalea, Anticuchos de pescado, Leche de tigre...
