In the list of pho stalls participating in Pho Day, there are three notable pho dishes that not everyone has ever enjoyed: Bac Ha Red Pho (Lao Cai), Lang Son Roasted Duck Pho and Que Son Cassava Pho ( Quang Nam ) managed by the Vietnam Young Chefs Association, with human resources from Hoa Muoi Retreat, Hoa Ani Vang as well as culinary artists...
Culinary expert Do Nguyen Hoang Long, representative of the association, shared with Tuoi Tre Online that "this activity is non-commercial in nature, focusing on sharing and introducing unique and new pho colors of different regions to Ho Chi Minh City residents and tourists, thereby connecting and inspiring the diversity of Vietnamese cuisine."
He added that the association invites artisans with in-depth expertise, uses standard local ingredients and demonstrates traditional manual processing techniques right at Pho Day.
Coming here, not only can diners enjoy unique bowls of pho, they also understand more about a diverse world of pho, rich in identity and highly localized.
This expert revealed that, like Pho Do Bac Ha, from brown rice and Bao Thai rice, artisans will make fresh pho noodles on the spot. In conjunction with an agricultural partner, they will use a special castrated rooster to prepare pho and introduce it to diners.

In Ho Chi Minh City, you can also enjoy Lang Son roasted duck pho.
Or like Lang Son roasted duck pho, the artisans will also use the right type of roasted duck with Lang Son flavor to ensure the authentic flavor of the dish.
With Que Son tapioca pho, a rare artist in the culinary world with deep understanding and extensive experience with this pho dish will "personally" cook this pho dish at the festival.

In addition to Pho Do (Bac Ha), Lang roasted duck pho, Que Son cassava pho, Pho H'Mong Village (Ha Giang), Pho Nho Pho Nui (two-bowl pho, Gia Lai), artichoke pho (Lam Dong)... also gather here to "exchange". Each stall is a "cultural discourse" with very clear regional characteristics.
Corn is the staple food of the Mong people in the Ha Giang rocky plateau. Corn pho combines the typical culinary features of the Mong people and traditional pho broth.
Chef Vuong Duc Bang (H'Mong Village) shared that this is a variation of pho with a strong Ha Giang mountainous flavor, created and published by Mr. Lai Quoc Tinh, owner of H'Mong Village, and his colleagues three years ago.

Currently in Ha Giang, corn pho is not officially sold widely. Besides being served at H'Mong Village, it is only available at Ha Giang Museum, so Pho Day is a rare opportunity for diners to experience this unique dish.
Mr. Bang said the group will bring a quintal of corn to Ho Chi Minh City to prepare for the corn pho dish at the festival. "At the Pho H'Mong Ha Giang stall, we will demonstrate making corn pho noodles, then slicing them right there for diners to see," he revealed.
As one of the units that have accompanied the Pho Day program for many years, Mr. Trang Truong Minh - representative of ATISPHO - said that the unit will bring here artichoke pho, a new combination of beef ribs and artichokes.

"This pho dish demonstrates creativity and local innovation with the famous artichoke product, not only combining the quintessence of traditional pho in processing but also combining local culinary culture to create a delicious artichoke pho dish typical of Da Lat".
At Pho Day, ATISPHO will bring the ingredients to make artichoke pho such as artichoke plants, artichoke stems, pink pho noodles and beef ribs... and diners will not only "eat" but also "touch, see, and understand".
Ms. Luong Vu Thao Nguyen, representative of Pho Nho Pho Nui (Gia Lai), said that her hometown has a famous dry pho dish, also known as pho hai to, which was recognized by the Asia Record Organization as "a culinary value of Asia" in 2012.
To ensure the original flavor, Pho Nho Pho Nui will bring special ingredients such as fresh pho noodles and black bean sauce directly from Gia Lai to Ho Chi Minh City, ready for two exciting days of pho in Ho Chi Minh City.

The Pho Day 12-12 program enters its 9th year with the theme "Raising the level of Vietnamese rice - Spreading to five continents" and will take place on December 13 and 14 at the Tax Trade Center (old), 135 Nguyen Hue, Saigon Ward, Ho Chi Minh City.
Participating in the program is the presence of nearly 30 famous and unique pho brands from North to South, converging many diverse types of pho with characteristics of regions and local cultures.
With a price of 40,000 VND/bowl, the Pho Day festival on December 12, 2025, is expected to serve more than 20,000 servings in 2 days. The organizers will allocate at least 10% of the revenue from pho sales to implement the Pho Yeu Thuong program, cooking and serving pho to people in the "flood center" area in Dak Lak province (formerly Phu Yen), which has just suffered damage from the recent natural disaster.
