There is a hypothesis that the name of Bun Suong - Tra Vinh specialty comes from the shape of the shrimp cake in this unique dish, processed by steaming or frying, shaped like a coconut worm (a type of worm in the coconut tree trunk) with a light yellow color, both fresh and soft.

Bun suong is made from rice flour mixed with a little tapioca starch, so the noodles are small and chewy, very easy to eat.
The basic ingredients of Bun Suong include vermicelli, shrimp and pork belly. In particular, shrimp patties are the key element, the "soul" of the dish lies in the shrimps shaped into long, slender patties.
This specialty dish attracts diners with its rich Tra Vinh broth. The broth of Bun Suong is simmered with pork bones, shrimp, dried squid and a little bit of tamarind.

First, wash the pork bones and boil them in boiling water for about 3 minutes. Then, remove the bones and wash them with cold water, put them in a pot, season to taste, and simmer for about 2 hours, skimming the foam frequently to keep the broth clear.
The broth of the Bun Suong dish is dark brown, has a sweet taste, and the aroma of tamarind and soy sauce has captivated many diners the first time they enjoy it.
To get delicious shrimp paste, skillful people often choose fresh, plump shrimp. The process of making shrimp paste is also quite elaborate and time-consuming.

Wash the shrimp, peel, marinate with good fish sauce and grind with minced onion and garlic to create a smooth mixture, add a little pepper to make the shrimp cake fragrant. Then, season to taste, brush with annatto oil to create an eye-catching golden color. Wrap the shrimp cake tightly, put in the refrigerator for about 2 hours.
Put the shrimp patties in a clean plastic bag, cut off a small end to "shape" the shrimp patties the size of your little finger, drop them into the boiling broth or fry them in cooking oil first. The shrimp patties will be golden yellow, when cooked they will float to the top, shaped like coconut worms or noodles, and have the brick red color of shrimp.
