VietNamNet newspaper quoted MSc. Dr. Le Thi Hai, former Director of the Nutrition Examination and Consulting Center (National Institute of Nutrition) as saying that pickling cucumbers or eggplants in the traditional way is a lactic fermentation process developed by naturally occurring lactic acid bacteria.

Thanks to the yeast, pickled cucumbers and eggplants have the effect of stimulating digestion. However, eating pickled cucumbers and eggplants that are not "ripe" enough will cause side effects, which is not good for the health of the user.

According to MSc. Dr. Le Thi Hai, when newly salted, melons and eggplants often have nitrate converted into nitrite. Nitrate is a residual substance in vegetables and tubers due to urea fertilizer or absorption from soil with high nitrate.

During the first few days of pickling (about 2-3 days), the nitrite content increases due to the microbial process of denitrification, then gradually decreases and disappears when the melon turns yellow and sour.

Therefore, if the melon is not sour enough, meaning the nitrite content is still high, there is a risk of harm. Specifically, when nitrite enters the body, it will react with secondary amines found in some foods such as shrimp, fish, shrimp paste... to form nitrosamine compounds that can cause cancer.

People who should not eat pickles

Pickled cucumbers are not safe for some groups of people. Health & Life Newspaper quoted MSc. Dr. Le Thi Hai pointing out that the following groups of people are advised not to pickle cucumbers.

1. People with stomach pain: Eating pickled vegetables can easily stimulate increased secretion of gastric acid, develop gastroesophageal reflux syndrome, and easily trigger existing stomach ulcers.

2. People with high blood pressure and cardiovascular disease: Pickles contain high sodium content, which is one of the causes of high blood pressure, so people with high blood pressure should not eat pickles.

3. Kidney disease: Patients with kidney failure have poor sodium excretion ability, so eating pickles causes salt retention in the body, causing edema and high blood pressure.

4. People with digestive diseases: People with chronic colitis, people who often have digestive disorders should not eat pickles. Pickles essentially contain many beneficial bacteria that can be very good for the digestive system.

However, pickles, especially quick pickles or quick vinegar pickles, may not completely eliminate all disease-causing microorganisms present in the food, thus causing more problems for your digestive tract.

5. Pregnant women: During pregnancy, it seems that the mother's digestive tract becomes more sensitive, especially when experiencing morning sickness, while pickles can become a stimulating food, increasing the feeling of fullness and nausea.

Moreover, you will not be sure about the safety of the food and the additives that can be added to the pickles and how they affect you and your baby. Especially in the last months of pregnancy, you need to eat a bland diet to avoid edema and pregnancy poisoning, so pregnant women should not eat pickles.

6. Children under 5 years old: Children's kidney function is not yet complete, so eating a lot of pickles will also affect the excretion of salt from the body. On the other hand, the child's digestive system is also not complete, so the child will easily have digestive disorders.
