A regular customer revealed that every weekend he drives two hours from Kyoto to enjoy the noodles here. “Even in Kyoto or Osaka, it is difficult to find noodles like this. The broth is really special.”
Ramen Yama opened in 2023, renovated from a spacious old house.
The owner proudly said that the broth for this 1,000 yen (about 170,000 VND) noodle dish is simmered from chicken bones for 6 hours at low temperature, completely removing the fat, creating a clear, pure taste without impurities but still deep and rich in sweetness.

Many diners commented that the noodles are "light but not bland, you can still get tired of sipping the soup to the last sip."
But what makes people line up early is the tuna rice bowl, which is sold in a limited quantity of 20 servings/day. Someone complained: “Last time I came, the fish was sold out, this time I have to come back for ‘revenge’”. The owner also admitted that more customers come for the tuna rice than for the ramen.
Tuna is bought in whole blocks, cut into large pieces to combine both lean and fatty fish. The “ramen noodles – tuna rice” set, sold for 1,500 yen (about 260,000 VND), is considered a bargain. Diners are satisfied because “the fish rice has a rich flavor, the ramen is delicious, sweet and well-balanced”.
The owner shared that he learned this idea from his teacher - who is famous for the Ramen Kawa noodle shop in Nara province.
He opened the restaurant in Misugi-cho town because this is an ideal stopover for bikers (people who are passionate about driving large-engine motorcycles). Beautiful roads, peaceful scenery, and delicious food, Ramen Yama restaurant has made this mountainous area an attractive destination for both diners and travel enthusiasts.
